Abstract

Se pretende proveer una bacteria que pertenece al genero Bifidobacterium que muestra una relacion de supervivencia incluso despues de almacenamiento bajo agitacion y permite la introduccion de alimentos fermentados que contienen una gran cantidad de celulas viables; y alimentos fermentados que son ricos en celulas viables, que tienen una bacteria que pertenece al genero de Bifidobacterium y que muestran efectos fisiologicos favorables para regular cepas daninas en el intestino, mejorando trastornos intestinales y similares; una bacteria que pertenece al genero Bifidobacterium que muestra una relacion de supervivencia de por lo menos 30% despues de cultivar en un medio que contiene leche como el componente principal hasta que el contexto viable logre 1X 108 ufc/ml o mas y luego almacenar a 10( bajo agitacion durante 14 dias; y alimentos fermentados que utilizan la misma.
