Abstract
La presente invención se refiere a un proceso para tratar frutas o verduras para minimizar el pardecimiento en procesamiento, manejo y almacenamiento posteriores, el método comprende: (a) separar tejido de pulpa comestible de tejido incomestible de la fruta o verdura; (b) escaldar dicho tejido de pulpa comestible en vapor de agua durante un periodo de tiempo de escaldadura predeterminado a una presión de escaldadura que sea inferior o igual a la presión atmosférica; (c) enfriar el tejido de pulpa escaldado y extraer calor residual del tejido de pulpa escaldado; (d) congelar el tejido de pulpa enfriado para obtener tejido de pulpa al menos parcialmente congelado; en donde el tejido de pulpa congelado obtenido en la etapa (d) posee propiedades organolépticas sustancialmente similares a tejido de pulpa recientemente separado en (a).
