Abstract
La presente invención se refiere a un nuevo tipo de composiciones de proteína de suero lácteo desnaturalizada con alto contenido proteico, que contiene CMP, y a un método de producirlas. La invención se refiere , además, a productos que contienen las composiciones de proteína de suero lácteo desnaturalizada de alto contenido proteico, particularmente productos lácteos acidificados, de alto contenido proteico, y a usos adicionales de las composiciones de proteína de suero lácteo desnaturalizada.
