Abstract

Un proceso y una disposicion para la preparacion de un material proteico desnaturalizado microparticulado, tal como proteína de suero microparticulada, con un tamano de partícula medio de entre 0,1 micrometro y 5 micrometros de diámetro. Se elimina el gas de una solucion acuosa o dispersion coloidal de un material proteico soluble o dispersable, se la pre-calienta a una temperatura por debajo de 69,5°C, luego se la calienta mediante el uso de energía mecánica a una temperatura (T) entre 70 y 120°C en un período de tiempo (td) entre 5 y 300 segundos bajo mezclado, y luego se la enfría por extincion a una temperatura por debajo de 55°C en u período de tiempo (tq) de menos de 30 segundos. El enfriamiento por extincion asegura un tamano de partícula pequeno deseable sin agregacion o subsiguiente homogeneizacion, asegurando un producto microparticulado con características organolépticas excelentes con una apariencia no arenosa, una opacidad apropiada, una textura homogénea, una viscosidad deseable en dispersion acuosa y una sensacion en boca similar a grasa. La proteína microparticulada es apropiada como texturizante y aditivo de union al agua para su uso tanto en productos alimenticios como productos no alimenticios que incluyen fármacos y cosméticos. De esta manera, la proteína desnaturalizada se puede usar en productos atractivos dotados con una apariencia, textura y sensacion al tacto o sensacion deseada en la boca, con una buena aceptacion de los consumidores.
