Abstract

Chocolate estable al calor que contiene una fase grasa, dicha fase grasa de dicho chocolate estable al calor contiene: de 0.1 a 15% en peso de semilla cristalina, de 0.01 a 5% en peso de un emulsionante diferente a la lecitina, dicha fase grasa de dicho chocolate estable al calor contiene además de 25 a 94.9% en peso de una manteca de cacao, de un equivalente de manteca de cacao o de una combinación de estos ingredientes, y al menos 5% en peso de un mejorador de manteca de cacao, en donde dicha semilla cristalina contiene triglicéridos SatOSat en una cantidad de entre 40 y 95% en peso de dicha semilla cristalina y triglicéridos StOSt en una cantidad de entre 30 y 85% en peso de dicha semilla cristalina, y la posición del pico principal endotérmico de fusión de dicha semilla cristalina es igual o superior a unos 40°C si se mide mediante calorimetría diferencial de barrido, en donde Sat significa un ácido graso saturado, St significa ácido esteárico y O significa ácido oleico.
