Abstract
Referido a una composicion estructurada de grasa vegetal caracterizada porque comprende: i) de 1% a 15% en peso de un emulsionante que consiste en monoacilgliceroles y diacilgliceroles, y ester de propilenglicol, con relacion al peso total de la composicion en el que: los monoacilglieroles y diacilgliceroles son derivados de aceites vegetales totalmente hidrogenados y tienen un indice de yodo de 2, y ii) de 85 a 99% en peso de un aceite vegetal refinado con relacion al peso total de la composicion, en el que el aceite vegetal refinado es un aceite vegetal que comprende acidos grasos oleicos y linoleico, en el que dicha composicion estructurada contiene un limite maximo de 2% de acidos grasos trans y presenta un contenido de acidos grasos saturados inferior o igual a 45% en peso con relacion al peso total de la composicion. Tambien se refiere a un proceso de obtencion de dichas composiciones y su uso en la preparacion de producto cosmetico y producto alimenticio.
