Abstract
La presente invención se relaciona con una composición formadora de crema que comprende aceites con contenido oleico ultraalto, con un contenido de ácido oleico de 85 a 97 % en peso de los ácidos grasos totales en la composición formadora de crema. La composición formadora de crema puede comprender mezcla de aceite de girasol con contenido oleico alto y de frijol de soya con contenido oleico alto en el rango de 90:10 a 10:90 o una mezcla de aceite de frijol de soya con contenido oleico alto y aceite de algas con contenido oleico alto en el rango de 90:10 a 10:90. La composición formadora de crema también puede comprender añadir antioxidantes soluble en aceite. La invención también se relaciona con una composición de bebida que comprende la composición formadora de crema en polvo o líquida, y un método para elaborarla.
