Abstract
UMA COMPOSIÇÃO DE GORDURA VEGETAL COMPREENDENDO ÁCIDOS GRAXOS C14 E OUTROS ÁCIDOS GRAXOS SATURADOS. É revelada uma composição de gordura vegetal compreendendo diferentes triglicerídeos com pelo menos alguns dos triglicerídeos compreendendo ácidos graxos C14. A composição de gordura vegetal é para uso em aplicações de panificação, laticínios ou confeitaria ou em revestimento de chocolate ou semelhante a chocolate, assim como um método para produzir a referida composição de gordura vegetal. Uma composição de gordura vegetal conforme revelada tem algumas das propriedades do substituto de manteiga de cacau e algumas das propriedades do sucedâneo de manteiga de cacau, combinadas em um produto, além de ser uma composição de gordura vegetal econômica.
