Abstract

Un procedimiento de desgomado con agua de un aceite comestible (preferiblemente un aceite comestible crudo) que comprende los pasos de: a) mezclar aproximadamente 0.1-5% p/p de agua con un aceite comestible (preferiblemente un aceite comestible crudo) y una lípido aciltransferasa, b) agitar la mezcla durante entre aproximadamente 10 minutos y 180 minutos a aproximadamente 45 a aproximadamente 90°C, y c) separar la fase de aceite y la fase de goma; preferiblemente dicha lípido aciltranferasa es un polipéptido que tiene actividad de lípido aciltransferasa, dicho polipéptido es obtenido por expresión de la secuencia de nucleótidos mostrada como SEQ ID No. 49 o una secuencia de nucleótidos que tiene 70% o más de identidad con el mismo; y/o es obtenido por expresión de un ácido nucleico que hibrida bajo condiciones de astringencia media a una sonda de ácido nucleico que comprende la secuencia de nucleótidos mostrada como SEQ ID No. 49; y/o es un polipéptido que tiene actividad de lípido aciltransferasa, dicho polipéptido comprende la secuencia de aminoácidos mostrada como SEQ ID No. 68 o una secuencia de aminoácidos que tiene 70% o más de identidad con el mismo; en una modalidad, la lípido aciltransferasa es preferiblemente usada en combinación con una enzima fosfolipasa C; un procedimiento para modificar la fase de goma de un aceite desgomado usando una lípido aciltransferasa también se enseña aquí.
