Abstract
The invention relates to the wine industry, namely to a process for producing red wine.The process, according to the invention, comprises crushing and destemming of grapes to produce batches of fresh pomace, placement thereof in fermentation-extraction tanks, extraction of the pomace with fermenting young wine, separation of the extractive young wine stock from the extracted pomace, post-fermentation and clarification of the wine, and removal of the extractive young wine from the precipitate, while in the process or at the end of post-fermentation, the young extractive wine is additionally macerated on the pomace or dripped-off pomace obtained from the processing of the last, in this wine-making season, batches of red grapes.
