Abstract
The invention relates to the wine industry, namely to a process for producing wine stock intended for distillation.The process, according to the invention, provides for the manual or mechanized harvesting of grapes, crushing thereof with or without destemming to produce fresh pulp, mixing thereof with wine distillery waste obtained in the same wine-making season, followed by maceration of the mixture and transportation to runoff and pressing, alcoholic fermentation of the obtained must, removal of young wine stock from the thick and yeast precipitate, followed by optional storage of wine before distillation.
