Abstract
The invention relates to the wine industry, namely to a process for producing wine stock intended for distillation.The process, according to the invention, provides for the manual or mechanized harvesting of grapes, crushing thereof with or without destemming to produce fresh pulp, mixing thereof with liquid thick and yeast precipitate separated from young wine stock of the same purpose at the end of rapid fermentation, followed by maceration of the mixture and transportation to runoff and pressing, alcoholic fermentation of the obtained must, removal of young wine stock from the thick and yeast precipitate, followed by optional storage of wine until distillation.
