Abstract

The invention relates to the wine-making industry, namely to a process for producing liqueur red wine.The process, according to the invention, comprises crushing and stemming of grapes to produce pomace, division thereof into two unequal parts; the greater part of pomace is subjected to fermentation-maceration up to fermentation of 20…50 g/dm3 of sugars, is sulphited 200…300 mg/kg of sulfur dioxide, is treated thermally at the temperature of 45…65°C and is directed to draining and pressing to obtain partially fermented musts: self-flowing and, respectively, pressings. The smaller part of pomace is alcoholized to the strength of 25…35% vol., is macerated at least 2 days, is separated the alcoholized self-flowing must, which is replaced with partially fermented must obtained from the greater part, is additionally macerated at least 2 days with subsequent draining and pressing, afterwards is carried out the assemblage of all musts, clarification and treatment of the wine stock.
