Abstract
The invention relates to the wine industry, namely to a process for producing extractive grape must intended for wine production.The process, according to the invention, provides for the processing of grapes with a yield of squash, pumping thereof into a maceration tank equipped with an agitator, squash sulphitation to a content of 250…350 mg/kg SO2 and acidification by administration of a food acid in a quantity of 2…6 g/kg, maceration of the squash, flowing down of the extract, pressing of the squash and clarification of the extract. At the same time, pumping of the squash is carried out in 2…3 portions with time intervals between them, and sulphitation and acidification is carried out by administration in the first portion of squash of a quantity of sulphurous acid or salts thereof, and of food acid, required for the total quantity of squash intended for maceration.
