Abstract

The invention relates to the wine industry, namely to a process for wine production from raw material with increased acidity.The process, according to the invention, provides for the chemical deacidification by administration of a reagent and, optionally, malolactic fermentation, as reagent being used ash obtained by burning of annual vine shoots, which is introduced in the mash or must and/or young wine in a dose of at most 1.0 g/dm3.
