Abstract
The invention relates to the wine industry, namely to a process for wine production from raw material with increased acidity.The process, according to the invention, provides the chemical deacidification by administering in the squash or must and/or new wine ash obtained by burning the sunflower seed shells, in a dose of at most 1.0 g/dm3 and, optionally, the malolactic fermentation.
