Inventia se refera la industria vinicola, si anume la un procedeu de fabricare a vinului din materie prima cu aciditate majorata. Procedeul, conform inventiei, prevede dezacidifierea chimica prin administrarea unui reagent si, optional, fermentarea malolactica, totodata in calitate de reagent se utilizeaza cenusa obtinuta la arderea coardelor anuale de vita-de-vie, care se administreaza in mustuiala sau in must, sau/si in vinul tanar in doza de cel mult 1,0 g/dm3.The invention relates to the wine industry, namely to a process for making wine from raw materials with increased acidity. The process, according to the invention, provides for chemical deacidification by administering a reagent and, optionally, malolactic fermentation, while as an reagent, the ash obtained is used to burn the annual grapes, which is administered in must or in must, or / and in young wine at a dose not exceeding 1.0 g / dm3.
