Abstract
Unfermented must is modified before pressing by the addition of 30-40g SO2 per hecto litre to the grapes and cold macerating them for 24h- to give a must which is then concentrated or stored after a second addition of SO2 (60g/hl). Two macerating tubs operate alternatively in a flow system fitted with SO2 supply and exits to a concentrator.
