Abstract

In the known process for the fermentation of juice or fruit in which the fruit or a concentrated juice therefrom is placed in a container and asphyxiated with CO2, the fruit or its juice is fermented in a sealed enclosure while maintaining therein a pressure of 10-100 g/cm2 (gauge) and a constant but adjustable temperature of 25-30 degrees C, and the admission of gaseous agents e.g. SO2, for accelerating or retarding the fermentation is precision controlled. In particular, in the application to the production of a fermented liquid from a concentrated fruit juice, at least one gas taking part in the fermentation is injected at a rate determined as a function of its action on this fermentation.
