Abstract

Fermentation to produce alcohol using yeast is carried out in the presence of an inert gas under pressure. The inert gas is preferably the carbon dioxide produced in the fermentation or may be carbon dioxide from other sources or hydrogen or nitrogen compressed before or at the commencement of the fermentation. Two forms of apparatus are shown in one of which the evolved carbon dioxide bubbles out through a head of water and in the other it escapes through a regulating valve.
