Abstract

Wine prepn. from must is affected without SO2 or H2SO3 addn. by allowing wine yeasts to take over fully the reducing function of H2SO3. After must fermentation, a biological acid degradation is initiated by means of yeasts present in wine. Wine is racked off yeast only after completion of acid degradation. Wine stability is not lowered by avoiding use of H2SO3 which might prove a health risk in excess quantities. By reductive power. CO2 escaping from malolactic fermentation, distributes the yeast throughout the container.
