Abstract

The invention relates to the wine industry, namely to a process for conservation of grape must intended for wine production.The process, according to the invention, provides for the processing of grapes with subsequent optional maceration of the squash, separation of the must, presulfitation and clarification thereof, acidification of the must by addition of an alimentary acid or acids in an amount providing a decrease in pH to values less than 2.8 and additional sulfitation with sulfurous acid to a total sulfurous acid content of 150…300 mg/dm3 with subsequent storage in sealed process vessels. At the same time acidification and additional sulfitation of the must is carried out by administration of the total amount of acids in the quantity of must, constituting 10…50% of its provided total volume with gradual addition of the residual quantity of must.
