Claims (10)

  1. 최소한 하나의 유리 아미노산원 및 최소한 하나의 환원당을 함유하는 첨가제를 포함하는 페이스트-유사 혼합물을 가열에 의해 반응시키는 고기와 유사한 풍미를 갖는 조미료의 제조방법에 있어서, 1∼3%의 물함량을 갖는 유리 아미노산원 70∼95 중량%, 첨가제 1∼25 중량% 및 물을 혼합하여 5∼12% 물을 함유하는 페이스트-유사 혼합물을 생성시키고, 페이스트-유사혼합물을 반죽 및 가열에 의해 소성하고, 소성 혼합물을 1∼100 바아하에 80∼140℃에서 30초∼30분간 반응시키고, 반응생성물을 5∼50 밀리바아의 감압하에 있는 방에서의 압출 및 팽창에 의해 건조 및 냉각함을 특징으로 하는 방법.
  2. 제 1 항에 있어서, 유리 아미노산원이, 혼합물의 중량%로서, 40∼95%의 단백질 가수분해물 및 30%의 효모 추출액을 포함하고, 첨가제가 0.5∼10%의 환원당, 0.5∼10%의 황-함유물질, 0∼20%의 모노소듐 글루타메이트 및 0∼5%의 이노신 모노포스페이트를 포함하고, 0∼40% 말토덱스트린 및 0∼15% 지방을 혼합물에 더 혼입시킴을 특징으로 하는 제조방법.
  3. 제 1 항에 있어서, 소성 혼합물을 80∼125℃의 온도에서 반응시키고, 그 온도를 압출전에 125∼140℃로 조정함을 특징으로 하는 제조방법.
  4. 제 1 항에 있어서, 1∼3%의 잔류 수분함량 및 100∼200g/l의 겉보기 밀도를 갖는 팽창, 압출 반응생성물을 얻고 이를 분쇄하여 450∼750g/l의 겉보기 밀도를 갖는 분말 또는 과립질을 형성시킴을 특징으로 하는 제조방법.
  5. 연속 혼합단위(1-3 : 21-22), 연속반죽 및 가열단위(4∼5 : 23∼25) 및 펌프(13)에 연결된 방(12)으로 통하는 압출단위(6 : 26 : 7∼11)를 포함함을 특징으로 하는 제 1 항에 기재된 방법을 수행하기 위한 장치.
  6. 제 5 항에 있어서, 연속혼합 단위가 분말형 성분용 공급호퍼(2) 및 액체 성분용 공급관(3)으로 덮인 아르키메디안 스크루우 컨베이어(1)를 포함하고, 연속 반죽 및 가열단위가 이중재킷(5)으로 둘러 싸여진 아르키메디안 스크루우 컨베이어(4)를 포함하고 압출단위가 펌프(6) 및 압출다이(11)를 포함함을 특징으로 하는 장치.
  7. 제 5 항에 있어서, 연속혼합 단위가 단일 스크루우 또는 쌍 스크루우 압출기(20)의 건조 성분 충전용의 첫번째 구역(12) 및 액체 성분 충전용의 두번째구역(22)을 포함하고, 연속반죽 및 가열단위가 압출기의 최소한 하나의 세번째 반죽 및 가열구역(23∼25)을 포함하고 각 구역에는 독립적인 이중 재킷이 구비되어 있음을 특징으로 하는 장치.
  8. 제 7 항에 있어서, 압출단위가 압출기의 독립적인 이중 재킷이 구비된 최소한 하나의 최종구역(26) 및 압출다이를 포함함을 특징으로 하는 장치.
  9. 제 7 항에 있어서, 압출단위가 독립적인 이중 재킷으로 둘러싸인 압출기의 최소한 하나의 최종구역(26), 압출기에 연결되고, 기하학적 정적혼합요소(9)로 채워져 있고 이중재킷(8)으로 둘러싸여 있는 최소한 하나의 가열튜브(7) 및 또한 가열 튜브(7)에 연결된 압출다이(11)를 포함함을 특징으로 하는 장치.
  10. 제 9 항에 있어서, 연속반죽 및 가열단위가 압출기(26)와 가열튜브(7) 사이에 연결되어 있고, 기하학적 혼합요소(33)로 채워져 있고 이중재킷(32)로 둘러 싸여져 있는 보압튜브(31)를 더 포함함을 특징으로 하는 장치.
