Claims (4)
- 복국의 조리하는 방법에 있어서,먼저, 불 위에 놓인 도가니에 맛국물 450~500 ㎖, 얕게 썬 편무 20 g, 콩나물 50~70 g을 넣고, 2~5분간 100~150 ℃의 센불로 끓인 후,가식부의 복어를 도가니에 담기 알맞은 크기로 도막내어 준비된 복어육 200~300 g과 곤 10~20 g을 도가니에 넣고, 또 다시 2~3분간 100~150 ℃의 센불로 끓인 후,80~90 ℃의 중불로 낮추어 소금으로 간을 하고,최종적으로, 미나리 2~3 g, 팽이버섯 2~3 g, 다진 마늘 3~5 g을 순차적으로 첨가하여 복국이 조리되는 것을 특징으로 복국의 조리방법.
- 제 1항의 제조방법에 의해 제조된 것을 특징으로 하는 맛국물을 이용한 복국.
- 제 1항에 있어서,맛국물은, 용기(솥)에 물 20 ℓ를 넣고 끓인 후, 건 다시마 200~300 g, 무 300~500 g, 양파 100~300 g, 대파 50~150 g, 손질된 복어머리 500~1,000 g을 끓은 물이 담긴 용기에 넣고, 100~150 ℃의 센불에 2시간동안 중탕하고, 중탕된 내용물을 삼베주머니에 넣고 체에 거른 후 맛국물을 제조하여 복국의 맛국물로 사용하는 것을 특징으로 하는 복국의 조리방법.
- 제 2항의 방법에 의하여 제조되어지는 맛국물의 조성은, 물 20 ℓ, 건 다시마 200~300 g, 무 300~500 g, 양파 100~300 g, 대파 50~150 g, 손질된 복어머리 500~1,000 g으로 구성되어 복국의 맛국물로 제조되어지는 것을 특징으로 하는 맛국물.
