Claims (3)
- 채로 친 건삼 400 중량부를 찬물 400중량부에 불린 후 상기 불린 인삼을 건조시킨 후 증숙기에 넣고 90∼95℃로 증숙시켜 식힌 다음 상기 1차 증숙 인삼을 90∼95℃로 2차 증숙시켜 식힌 후 90∼95℃로 3차증숙시키고 식혀 홍삼을 제조하는 단계; 구기자 및 삼백초로 이루어진 그룹 중에서 선택되는 하나 이상의 한약재 50 중량부를 120℃로 찐 후 식혀 물기를 제거하여 곤짠지용 한약재를 제조하는 단계; 물 1500중량부에 생강 50중량부, 대추 50중량부, 감초 10중량부, 홍화씨 50 중량부, 파뿌리 100 중량부 및 양파 100 중량부를 가하고 서서히 가열하여 육수가 5000중량부 될 때까지 끊이고 상기 육수를 차게 식힌 후 상기 육수에 고춧가루 400 중량부, 익힌 마가루 30 중량부, 익힌 율무가루 20 중량부, 마늘 30 중량부, 소금 50 중량부, 깨소금 20중량부 및 꿀 50 중량부를 가하고 혼합하여 18℃에서 12시간 숙성시켜 홍삼곤짠지 양념을 제조하는 단계; 상기 홍삼 60∼90중량부를 상기 양념 10∼30 중량부에 버무린 후 24시간 간이 베게 항아리에 꼭꼭 눌러담아 저장하는 단계로 이루어진 것을 특징으로 하는 홍삼곤짠지의 제조방법.
- 제 1항에 있어서, 상기 건삼은 인삼엑기스를 20% 추출한 후 여과한 여과물을 사용하고 추출한 인삼엑기스는 엑기스 제품으로 사용하는 것을 추가로 구성하는 것을 특징으로 하는 홍삼곤짠지의 제조방법.
