Abstract
Description
Claims (12)
- 1.脂肪酸混合物から誘導された、置換度が脂肪酸基約4のソルビトール脂肪酸 エステルよりなる組成物であり、但し、該エステルの脂肪酸基の全てがオレイン 酸から誘導されたものではない、低カロリー脂肪代替物として有用な組成物。
- 2.該ソルビトールエステルの少なくとも一部が無水物の形である、請求項1の 組成物。
- 3.該脂肪酸エステルの脂肪酸基が合成、天然、飽和、不飽和、直鎖および分枝 鎖脂肪酸並びにこれらの混合物よりなる群から選ばれる、請求項1の組成物。
- 4.該脂肪酸エステルの脂肪酸基が酪酸、カプロン酸、カプリル酸、ペラルゴン 酸、カプリン酸、ウンデカン酸、ラウリン酸、ミリスチン酸、パルミチン酸、オ レイン酸、エライジン酸、ミリストオレイン酸、パルミトレイン酸、リシノール 酸、エルカ酸、ステアリン酸、アラキン酸、べヘン酸、リノール酸、リノレン酸 、エレオステアリン酸およびアラキドン酸;脂肪酸誘導体;並びにこれらの混合 物よりなる群から選ばれる、請求項1の組成物。
- 5.該脂肪酸エステルの脂肪酸基が大豆油、サフラワー油、ヒマワリ油、ゴマ油 、ピーナッツ油、トウモロコシ油、オリーブ油、米ぬか油、カノーラ油、ナタネ 油、シア油、ババス油、ココナッツ油、パーム核油、綿実油およびパーム油;バ ター脂;牛(羊)油およびラード;並びにこれらの混合物よりなる群から選ばれ る非水素化、部分水素化および水素化油よりなる群から選ばれる油から得られる 、請求項1の組成物。
- 6.該脂肪酸エステルの脂肪酸基が非水素化、部分水素化および水素化大豆油か ら選ばれる、請求項7の組成物。
- 7.普通に存在するトリグリセリドの少なくとも一部を置換度が脂肪酸基約4の ソルビトール脂肪酸エステルで置き換えたトリグリセリド含有食品であって、該 食品が冷凍デザート、サラダドレッシングまたはサラダ油、クラッカー用のディ ップ、チップス用のディップ、野菜用のディップ、スプレッド、ホイップしたト ッピング、トリグリセリド含有糖果、ケーキ用のフロスティングまたはアイシン グ、クッキー用のフロスティングまたはアイシング、ケーキ用のフィリング、ク ッキー用のフィリング、ホイップデザート、ゲル化デザート、プディング、飲料 、ショートニング、フライ油、スープ、グレービー、ソース、焼いた製品、マヨ ネーズまたは模倣マヨネーズ、液体または乾燥模倣乳製品、液体または塑性マー ガリンスプレッド、パスタ、肉類似品、鳥肉類似品、魚肉類似品、調理またはフ ライ用のスプレー、およびスナック食品用のコーティングよりなる群から選ばれ る上記の食品。
- 8.該ソルビトール脂肪酸エステルの少なくとも一部が無水物の形である、請求 項7の食品。
- 9.普通に存在するトリグリセリドの少なくとも一部を置換度が脂肪酸基約4の ソルビトール脂肪酸エステルよりなる組成物で置き換えることよりなる、トリグ リセリド含有食品の脂肪含有量を減少させる方法であって、該食品が冷凍デザー ト、サラダドレッシングまたはサラダ油、クラッカー用のディップ、チップス用 のディップ、野菜用のディップ、スプレッド、ホイップしたトッピング、トリグ リセリド含有糖果、ケーキ用のフロスティングまたはアイシング、クッキー用の フロスティングまたはアイシング、ケーキ用のフィリング、クッキー用のフィリ ング、ホイップデザート、ゲル化デザート、プディング、飲料、ショートニング 、フライ油、スープ、グレービー、ソース、焼いた製品、マヨネーズまたは模倣 マヨネーズ、液体または乾燥模倣乳製品、液体または塑性マーガリンスプレッド 、パスタ、肉類似品、鳥肉類似品、魚肉類似品、調理またはフライ用のスプレー 、およびスナック食品用のコーティングよりなる群から選ばれる上記の方法。
- 10.該ソルビトール脂肪酸エステルの少なくとも一部が無水物の形である、請 求項9の方法。
- 11.置換度が脂肪酸基約4のソルビトール脂肪酸エステルおよびソルビトール 無水脂肪酸エステルの混合物の製造方法であって、ソルビトール、アルカリ金属 脂肪酸石鹸、ソルビトールの重量に基づいて過剰の脂肪酸アルキルエステル、お よび塩基性触媒の混合物を、好ましい程度のエステル化を行うのに十分な温度お よび時間、加熱することよりなる上記の方法。
- 12.請求項11の方法によって製造された置換度が脂肪酸基約4のソルビトー ル脂肪酸エステルおよびソルビトール無水脂肪酸エステルの混合物。
