本発明に係るソルビトール系増量剤の特性
以下の表2に、本発明に係るチューインガム組成物の生産に使用し得るソルビトール系増量剤の特性を掲載する。
上記の実施例2に記載されるソルビトール系増量剤を使用して調製した本発明に係るチューインガム組成物。
チューインガム組成物に使用される成分、以下の表3。
− 混合:分単位の手順−Z型アーム混練機において45℃で行われる−50kgのセンターのバッチ生産
0分:溶融したガムベース(50℃で一晩加熱処理する)及びマンニトールの投入。
3分:Lycasin(登録商標)85/55を加える。
5分:増量剤、即ちNeosorb(登録商標)ソルビトール又はLabAタイプのソルビトールのいずれかを加える。
9分:グリセロールを加える。
10分:ミント粉末香料及びメントール結晶タイプの香料を加える。
12分:ミント液体香料を加える。
15分:混練機から取り出す(ペーストは約50℃である)。約2kgのケークを形成し、それらを50%RH及び20℃で1時間貯蔵する。押出しのためには、ケークは約48℃でなければならない。
− 押出し(Togum TO−E82機)
− ボディ設定点温度=36℃
− ヘッド設定点温度=39℃
− 4ステーション圧延−2ステーションプレカット(Togum TO−W191機)。
− チューインガム帯状片に90/10マンニトール/タルク混合物を振り掛ける。
− 熟成
− タブのプレカット板を約15℃−50%RHで約24時間貯蔵する。
上記で得られたチューインガムを、チューインガムの食味検査及び格付けに熟練した15人の審査員が試食した。
− これらの2つのチューインガムの柔軟性は同じように変化する。対照チューインガムより少ないガムベースを含有しているにも関わらず、食味検査員の審査員によれば、これらの2つの試料間に食感の点で、より詳細には柔軟性の点で違いは認められなかった。
− 香味の知覚及び持続性に関して、ここでもまた、T=10秒において対照チューインガムと本発明に係るチューインガムとの間に違いはない。レシピにおいて香料がより少量であるにも関わらず、本発明に係る甘味組成物を含有するチューインガムにおける前記香料の知覚は対照チューインガムと同じである。さらには、より少量のガムベース及びより少量の香料を含有する、本発明に係る甘味組成物から得られるチューインガムは、それにも関わらず3分間噛んだ後に対照チューインガムよりやや良好と格付けされるため、時間とともに香味持続性が改善されるようにさえ見える。

Claims (6)
- BET法により決定して0.5m2/g未満の比表面積であって、250μm〜841μmの画分で計測される比表面積を有するマルチトール以外の増量剤を重量基準で30%〜70%含み、当該パーセンテージは、使用されるチューインガム組成物の総重量に対する重量によって表され、前記増量剤がソルビトールであることを特徴とする、チューインガム組成物。
- 前記増量剤がBET法により決定して0.2〜0.45m2/gの比表面積であって、250μm〜841μmの画分で計測される比表面積を有することを特徴とする、請求項1に記載のチューインガム組成物。
- 0.0085ml/g未満の多孔度を有する前記増量剤を含むことを特徴とする、請求項1に記載のチューインガム組成物。
- 40%〜60%の前記増量剤を含み、当該パーセンテージは、使用されるチューインガム組成物の総重量に対する重量によって表されることを特徴とする、請求項1に記載の組成物。
- 前記増量剤が、ソルビトールの乾燥重量基準で95%より高い純度を有するソルビトールであることを特徴とする、請求項1に記載の組成物。
- − 10%〜28%の少なくとも1つのガムベース、
− 30%〜70%の、250μm〜841μmの画分で計測して0.5m 2 /g未満の比表面積を有するマルチトール以外の増量剤、
