Abstract

キノコ材料、及び結合剤又はエマルションの少なくとも1つを含む未加工キノコ系肉代用物を調製する工程と、

上記成形工程が存在する場合、上記キノコ材料又は未加工キノコ系肉代用物は成形工程に曝露されて、成形キノコ材料又は成形キノコ系肉代用物が製造され、
上記キノコ材料、未加工キノコ系肉代用物、成形キノコ材料又は成形キノコ系肉代用物はレトルト加工プロセスに曝露される方法を提供する。

以下に記載される例示的な配合物において、エマルションは、1:5:1の比の単離された大豆タンパク質(乳化剤):水(極性液体):ヤシ油(担体油)を含む。キノコ材料は、キノコの軸を実質的に含む。以下の実施例1~実施例3及び実施例7は、約14.3%(w/v)の単離された大豆タンパク質、約71.4%(w/v)の水及び約14.3%(w/v)のヤシ油を含む乳化剤を含む。
キノコ系肉代用物1~7を作製するために、混合物が滑らかな塊になるまで高剪断乳化剤を用いてエマルションをまず調製した。
Claims (16)
- キノコ材料、エマルション及び/又は結合剤を含むキノコ系肉代用物の調製方法であって、
前記キノコ材料、並びに前記結合剤及び前記エマルションの少なくとも1つを含む未加工キノコ系肉代用物を調製する工程と、
任意選択の成形工程を実施する工程と、
レトルト加工工程を実施する工程と
を含み、
前記成形工程が存在する場合、前記キノコ材料又は未加工キノコ系肉代用物は成形工程に曝露されて、成形キノコ材料又は成形キノコ系肉代用物が製造され、
前記キノコ材料、未加工キノコ系肉代用物、成形キノコ材料又は成形キノコ系肉代用物はレトルト加工プロセスに曝露される方法。 - 前記キノコ材料又は未加工キノコ系肉代用物が成形工程に曝露されて、成形キノコ材料又は成形キノコ系肉代用物が製造される請求項1に記載の方法。
- 前記未加工キノコ系肉代用物が前記キノコ材料及び前記結合剤を含む請求項1に記載の方法。
- 前記未加工キノコ系肉代用物が前記キノコ材料及び前記エマルションを含む請求項1に記載の方法。

- 存在する場合、前記エマルションが、レシチン、水及び植物由来の油を含む請求項7又は請求項8に記載の方法。
- 存在する場合、前記結合剤が、植物由来のデンプン、脂肪又はタンパク質である請求項7又は請求項8に記載の方法。
- 前記キノコ系肉代用物が、約30%(w/w)~約95%(w/w)のキノコ材料と、存在する場合、約2%(w/w)~約60%(w/w)のエマルションと、存在する場合、約0.5%(w/w)~約10%(w/w)の結合剤とを含む請求項1から請求項11のいずれか1項に記載の方法。
- 前記キノコ系肉代用物が、約30%(w/w)~約95%(w/w)のキノコ材料と、約2%(w/w)~約60%(w/w)のエマルションと、約0.5%(w/w)~約10%(w/w)の結合剤とを含む請求項7又は請求項8に記載の方法。
- 請求項1に記載の方法によって製造されたキノコ系肉代用物。
- 請求項14に記載の方法によって製造されたキノコ系肉代用物。
