例1で調製した各きのこボールについて、3〜6名の専門パネルにより官能評価を行った。官能評価は例2で調製したミートボールを最高点である5点として、該ミートボールの食感との比較で5点(最高点)〜1点(最低点)をつける5段階評価とし、専門パネルの平均点が2.5以上である場合に好ましい食感として評価した。結果を表4に示す。
Claims (7)
- 生の状態、茹でた状態及び乾燥した後に水で戻した状態からなる群から選ばれるいずれか1種の状態で、水分が93質量%より少なく、又は、食物繊維が2.0質量%より多いきのこ類の細断物と、
つなぎ成分と
を含有する、肉様食品。 - 前記きのこ類は、エリンギ、ヤマブシタケ、マイタケ、エノキ、ヒラタケ及びシイタケからなる群から選ばれる少なくとも1種のきのこ類である、請求項1に記載の肉様食品。
- 前記つなぎ成分は、卵、卵白粉、大豆タンパク、ペクチン、アルギン酸、こんにゃく粉、グルコマンナン及びカードランからなる群から選ばれる少なくとも1種のつなぎ成分である、請求項1〜2のいずれか1項に記載の肉様食品。
- 前記肉様食品は、ボール状の肉様食品である、請求項1〜3のいずれか1項に記載の肉様食品。
- 生の状態、茹でた状態及び乾燥した後に水で戻した状態からなる群から選ばれるいずれか1種の状態で、水分が93質量%より少なく、又は、食物繊維が2.0質量%より多いきのこ類の細断物を炒めることにより、きのこ類の炒め物を得る工程と、
前記きのこ類の炒め物とつなぎ成分とを混練することにより、肉様食品を得る工程と、
を含む、肉様食品の製造方法。 - 前記肉様食品を全体的又は部分的にボール状に成形することにより、ボール状の肉様食品を得る工程
をさらに含む、請求項5に記載の肉様食品の製造方法。 - 前記ボール状の肉様食品を油調することにより、揚げた状態のボール状の肉様食品を得る工程
をさらに含む、請求項5又は6に記載の肉様食品の製造方法。
