着色防止材料のスクリーニング試験
表1−1〜表1−3に示す各製剤を調製した。調製した製剤を50mL容の蓋付きガラス瓶に各40g入れ、冷凍機付きインキュベーター(PHC株式会社製:MIR−554−J)にて、0℃および45℃で1か月間保管した。保管後の各製剤について、着色の程度を目視にて観察し、下記評価基準にて評価した。また、保管後の各製剤について、臭いの確認を行い、下記評価基準にて評価した。着色および臭いの評価結果を表1−1〜1−3に示す。尚、各製剤の調製には、下記材料を用いた。
・無水酢酸ナトリウム(平均粒子径(D50):276μm、三菱ケミカル株式会社製)

粉末状品質保持剤の調製
表2−1〜2−4に示す組成の製剤A〜Tを調製した(表中の各成分の割合を示す数値の単位は重量%)。尚、各製剤の調製に用いた材料は、上記試験例と同一のものを使用した。
調製した製剤A〜Tを秤量瓶に2g入れ、室温25℃、相対湿度60%RHの室内で、45℃に設定した恒温乾燥器(三洋電機特機株式会社製:MOV−202)に入れ(相対湿度20%RH)、12時間乾燥させた。同様にして室温25℃、相対湿度60%RHの室内で120℃に設定した真空乾燥器(株式会社東洋製作所製:VO−32D)で4時間乾燥させた。各温度における乾燥前後の重量から減少率を算出し、乾燥減量とした。温度45℃、相対湿度20%RHの環境下で12時間乾燥させた時の乾燥減量(Xa)および温度120℃の環境下で4時間乾燥させた時の乾燥減量(Xb)の測定結果を表2−1〜2−4に示す。
調製した製剤A〜Tを50mL容の蓋付きガラス瓶に各40g入れ、冷凍機付きインキュベーター(PHC株式会社製:MIR−554−J)にて、0℃および45℃で2週間保管した。保管後の製剤について、測色色差計ZE6000(日本電色工業株式会社製)を用いて、ASTM D 1925に規定される黄色度(YI)測定法により、黄色度を測定した。45℃で保管した製剤の黄色度(YIa)から、0℃で保管した製剤の黄色度(YIb)を差し引いて、色差(ΔYI)を算出した。色差の測定結果を表2−1〜2−4に示す。
製剤の乾燥減量および色差の測定
表3に示す製剤を上記実施例と同様の方法により、乾燥減量(Xa、Xb)および色差(ΔYI)を測定した。結果を表3に示す。尚、各製剤の調製には、下記材料を用いた。
・無水L−アスコルビン酸ナトリウム(平均粒子径(D50):155μm、維生薬業有限公司製)
・塩化ナトリウム(日本食塩製造株式会社製)
・クエン酸三ナトリウム(磐田化学工業株式会社製)
・フマル酸一ナトリウム(扶桑化学工業株式会社製)
・プルラン(平均粒子径(D50):233μm、株式会社林原製)
表3に示す製剤8gを水道水200gに溶解して4重量%水溶液を調製した。市販の冷凍インゲンを1%食塩水で1分30秒間ボイルした後、液切りし、調製した水溶液に4℃にて60分間浸漬した。浸漬液からインゲンを取り出し、5gずつ滅菌処理済みの細菌検査用ポリ袋に入れて密封し、サンプルとした。サンプルは25℃の恒温器内で1000lx照射下にて2日間保存した。保存後のサンプルの一般細菌数を測定し、下記静菌効果評価基準により評価した。保存後のサンプルの色調変化は目視で観察し、下記変色抑制効果評価基準(目視)により評価した。また、測色色差計ZE6000(日本電色工業株式会社製)を用いて、製造直後と保存後のボイルインゲンの明度L*値、色相a*値(緑色⇔赤色)、色相b*値(青色⇔黄色)を測定した。製造直後の値をp、保存後の値をqの添え字で示すとき、下式により総合的な色の差であるΔE*を算出した。
なお、ΔE*は製造直後と保存後のL*、a*、b*の数値の差を表し、下記変色抑制効果評価基準(色差ΔE*)により評価した。さらに、浸漬液から取り出した直後のインゲンの味質を下記味質評価基準により評価した。

ΔE*の数値が小さいほど、製造直後からの変化が少なく、変色抑制効果が高いことを示す。ΔE*の値が12以下であるのが好ましく、11以下であるのがより好ましい。
○:ほとんど異味がなく、好ましい
△:僅かに異味があるが、好ましい
×:異味があり、好ましくない

- アスコルビン酸類、酢酸塩およびプルランを含有する粉末状品質保持剤であって、該品質保持剤を、温度45℃、相対湿度20%RHの環境下で12時間乾燥させた時の乾燥減量(Xa)が−0.1〜0.1%であり、温度120℃の環境下で4時間乾燥させた時の乾燥減量(Xb)が0.05〜0.5%であり、且つ、50mL容の蓋付きガラス瓶に密封した該品質保持剤を、温度45℃の環境下で2週間保管後の黄色度(YIa)と温度0℃の環境下で2週間保管後の黄色度(YIb)との色差(ΔYI)が14未満である、粉末状品質保持剤。
- 乾燥減量(Xa)が−0.05〜0.08%であり、乾燥減量(Xb)が0.06〜0.4%であり、色差(ΔYI)が12未満である、請求項1に記載の粉末状品質保持剤。
- アスコルビン酸類としては、L−アスコルビン酸、L−アスコルビン酸ナトリウム、L−アスコルビン酸カルシウム、L−アスコルビン酸カリウム、L−アスコルビン酸アンモニウム、L−アスコルビン酸モノエタノールアミン、L−アスコルビン酸ジエタノールアミン、エリソルビン酸、エリソルビン酸ナトリウム、エリソルビン酸カルシウム、エリソルビン酸カリウム、エリソルビン酸アンモニウム、エリソルビン酸モノエタノールアミン、エリソルビン酸ジエタノールアミンからなる群から選ばれる1種以上である、請求項1または2に記載の粉末状品質保持剤。
- 酢酸塩が酢酸ナトリウム、酢酸カリウム、酢酸カルシウムからなる群から選ばれる1種以上である、請求項1〜3のいずれかに記載の粉末状品質保持剤。
- アスコルビン酸類と酢酸塩の混合比が、1:99〜99:1である、請求項1〜4のいずれかに記載の粉末状品質保持剤。
- アスコルビン酸類および酢酸塩の割合の合計が粉末状品質保持剤全重量に対し、40〜99重量%である、請求項1〜5のいずれかに記載の粉末状品質保持剤。
- プルランの割合が粉末状品質保持剤全重量に対し1〜10重量%である、請求項1〜6のいずれかに記載の粉末状品質保持剤。
- さらに、pH調整剤を含有する、請求項1〜7のいずれかに記載の粉末状品質保持剤。
- pH調整剤がクエン酸、フマル酸、リンゴ酸、コハク酸、アジピン酸、乳酸、酒石酸、グルコン酸、フィチン酸、プロピオン酸、酪酸、リン酸、次亜リン酸および亜リン酸、又はそれらのナトリウム塩、カリウム塩、カルシウム塩およびアンモニウム塩からなる群から選ばれる1種以上である、請求項8に記載の粉末状品質保持剤。
- 請求項1〜9のいずれかに記載の粉末状品質保持剤を溶解させた溶液に、食品を浸漬することを特徴とする、食品の品質保持方法。
- 食品が緑色野菜、ボイル緑色野菜、カット野菜、カットフルーツからなる群から選ばれる1種以上である、請求項10に記載の品質保持方法。
- 請求項1〜9のいずれかに記載の粉末状品質保持剤を食品の原材料と共に混合することを特徴とする、食品の品質保持方法。
- 食品が野菜惣菜、果実加工品、フィリングからなる群から選ばれる1種以上である、請求項12に記載の品質保持方法。
- アスコルビン酸類および酢酸塩を含有する粉末状品質保持剤に粉末状プルランを混合することを特徴とする粉末状品質保持剤の安定化方法。
