Abstract
Description
本発明は穀物に含有される油脂肪成分により産業的に大量の穀物をナノ粒子に微粉砕できない問題点を解消し、穀物をナノ粒子に微粉砕する量産システムを提供し、素材のナノ粒子と精製水の水を結合させる効果的なシステム装置を提供する。
本発明は上記のような問題点を解消するために先ず先決課題として、穀物に含有された乳脂肪成分によりナノ粉砕装置の駆動部やビーズ(Bead)と穀物の乳脂肪成分が絡まり、穀物をナノ粒子に微粉砕できない問題点を解決するためにナノ粉砕装置投入前の段階で穀物をロースト(Roasting)したりボイル(Boiling)したり、ロースト後ボイルするプロセスを経て穀物を粉砕した後、精製水を混合し高圧で拡散させ拡散(Diffusion)状態の懸濁液に変換し穀物の乳脂肪成分を拡散させた後、これを湿式ナノ粉砕手段に投入し微粉砕することで穀物が凝集することなく産業的ナノ粒子の大きさに量産する効果的な技術を提供する。
の問題点を解消し、穀物のナノ粒子と精製水の水分子間に拡散(Diffusion)や分子間の結合により、一切の化学剤を添加せず乳化させ純植物性代替牛乳を製造する方法とシステムを提供する。
本発明は一切の廃棄物が発生せずに一切の科学的乳化剤や安定剤を添加する必要がなく、異臭除去目的に使用する砂糖の量を減らすことができ、生産コストを約1/2節減する効果がある。
Claims (11)
- 植物性代替牛乳の製造方法において、
(1)キヌア、アマランス、豆を含む穀物素材から選択された素材をロースト(Roasting)、ボイル(Boiling)、またはロースト後ボイルするプロセスから選択されたプロセスを経た後、粉砕機に投入し微細粉砕する粉砕段階と、
(2)上記の粉砕された素材に精製水を混合し高圧拡散装置で拡散(Diffusion)状態の懸濁液に製造し、素材の油脂肪成分を拡散させる高圧拡散段階と、
(3)上記の拡散状態の懸濁液を湿式ナノ粉砕手段で微粉砕すると同時に微粉砕された素材の粒子と精製水の水分子間を結合させる分子結合段階を含む方法を特徴とする植物性代替牛乳の製造方法。 - 請求項1において、上記の粉砕段階以前に素材の皮除去可否を選択的にプロセッシング(Processing)する段階を付加構成することを特徴とする植物性代替牛乳の製造方法。
- 請求項1において、上記の拡散段階以前に異種の穀物素材の粉末を混合する混合段階を付加構成することを特徴とする植物性代替牛乳の製造方法。
- 請求項1において、上記の分子結合段階以前に拡散段階を経た異種の懸濁液を混合する段階を付加構成することを特徴とする植物性代替牛乳の製造方法。
- 請求項1において、上記の湿式ナノ粉砕手段をビーズミル(Bead Mill)、ディスクミル(Disk Mill)、コロイドミル、高圧均質機から選択された手段や上記の手段を2つ以上結合構成し、素材の懸濁液を数回反復的に循環させ素材の粒子を順次縮小粉砕するように構成することを特徴とする植物性代替牛乳の製造方法。
- 純植物性代替牛乳を製造するシステム装置において、
(1)キヌア、アマランス、豆を含む穀物素材から選択された素材をロースト、ボイルまたはローストした後ボイルするプロセスから選択されたプロセスを経た後、粉砕(Grinding)する1次粉砕手段と
(2)1次粉砕手段で粉砕された素材を精製水と混合し高圧で拡散させ拡散(Diffusion)状態の溶液に製造し、素材の乳脂肪成分を拡散させる高圧拡散手段と
(3)上記の拡散状態の溶液を注入し溶液に含有される素材の粒子を2次微粉砕しすると同時に微粉砕した素材の微細粒子と精製水の水分子間に結合を引き起こす最小1つ以上の湿式ナノ粉砕装置から構成される分子結合手段を含む植物性代替牛乳の製造システム装置。 - 請求項6において、異種の穀物粉末や懸濁液を混合する混合手段を付加構成することを特徴とする植物性代替牛乳の製造システム装置。
- 請求項6において、上記の分子結合手段をビーズミル(Bead Mill)、高圧バルブ手段、高速攪拌手段、高圧ホモジナイジング手段、コロイドミル(Colloid Mill)から選択された手段または上記の手段を2つ以上結合構成したことを特徴とする植物性代替牛乳の製造システム装置。
- 請求項6において、均質化手段を付加構成し、製造する代替牛乳の設計比率に応じて添加する素材の微細粉末や汁やエキスまたは異種の飲料から選択的に混合し、均質化するよう構成したことを特徴とする植物性代替牛乳の製造システム装置。
- 請求項6において、上記の分子結合手段を多数のビーズミルで構成し、ビーズ粒子のサイズが大きいビーズミルからビーズ粒子のサイズが小さいビーズミルへと素材の懸濁液を循環させ、素材の粒子を順次縮小粉砕するよう構成したことを特徴とする植物性代替牛乳の製造システム装置。
- 請求項6において、上記の1次粉砕手段で粉砕する前に素材の皮除去手段を付加構成したことを特徴とする植物性代替牛乳の製造システム装置。
