Abstract
【解決手段】 キチンを30%以上の濃塩酸を用いて、反応温度5℃以上30℃以下にて加水分解する加水分解工程を有し、製造するキチン分解物の種類に応じて前記加水分解工程における反応時間を1時間以上120時間以下の範囲で設定する。

Claims (6)
- キチンを30%以上の濃塩酸を用いて、反応温度5℃以上30℃以下にて加水分解する加水分解工程を有し、製造するキチン分解物の種類に応じて前記加水分解工程における反応時間を1時間以上120時間以下の範囲で設定することを特徴とするキチン分解物の製造方法。
- 前記キチンは、100cps以下の粘度であることを特徴とする請求項1記載のキチン分解物の製造方法。
- 前記濃塩酸は、前記キチンに対し3倍量以上12倍量以下であることを特徴とする請求項1又は2に記載のキチン分解物の製造方法。
- 前記反応時間を5時間以上24時間以下に設定して、キチンオリゴ糖を含むキチン分解物を製造することを特徴とする請求項1〜3の何れか記載のキチン分解物の製造方法。
- 前記反応時間を48時間以上96時間以下に設定して、Nアセチルグルコサミンを製造することを特徴とする請求項1〜3の何れか記載のキチン分解物の製造方法。
- 請求項5記載のキチン分解物の製造方法において、製造したNアセチルグルコサミンを結晶化した後に残存する母液を脱水する脱水工程と、
該脱水工程により得た残留物を30%以上の濃塩酸を用いて、反応温度5℃以上30℃以下にて加水分解する2次加水分解工程とを有し、Nアセチルグルコサミンを製造することを特徴とするキチン分解物の製造方法。
