Abstract
Description
式中、Stはデンプンであり、Rはアルキレン基であり、R’は疎水性基である。好ましくは、Rは、ジメチレンまたはトリメチレンなどの低級アルキレン基である。R’は、好ましくは5〜18個の炭素原子を有するアルキルまたはアルケニル基でよい。式(I)の好ましい加工デンプンは、オクテニルコハク酸デンプンナトリウム(「OSA−デンプン」)である。本明細書において使用される「OSA−デンプン」という用語は、オクテニルコハク酸無水物(OSA)で処理された任意のデンプン(コーン、小麦、タピオカ、ジャガイモなどの任意の天然源からのデンプン、または合成されたデンプン)を示す。置換度、すなわちヒドロキシル基の総数に対するエステル化ヒドロキシル基の数は、通常、0.1%〜10%の範囲、好ましくは0.5%〜5%の範囲、より好ましくは2%〜4%の範囲で様々である。

II) 場合により、少なくとも1つの加工デンプンをステップI)の溶液に添加するステップと、
III) 1つまたは複数の脂溶性活性成分および40重量%未満の油(乾燥物質における組成物全体を基準として)を含み、そして脂溶性活性成分がカロテノイドである場合には有機溶媒をさらに含む有機相を、ステップII)の溶液に添加するステップと、
IV) 30℃〜100℃の間、さらに好ましくは45℃〜80℃の間、さらに好ましくは50℃〜70℃の間の温度において、ステップIII)の混合物を乳化させるステップと、
IV) 有機溶媒を減圧下で蒸発させるステップと、
VI) 噴霧乾燥、パウダーキャッチ(powder catch)または他の方法によってエマルジョンを乾燥させるステップと、

エマルジョンは、液滴の内部相の分布が時間と無関係であれば物理的に安定であると考えられる。可能性のある不安定性は、クリーミング、沈降、オストワルド熟成、合体、転相および凝集である。

Claims (14)
- ガティガムおよび1つまたは複数の脂溶性活性成分を含む組成物であって、乾燥物質における組成物全体を基準として40重量%未満の油を含む組成物。
- 脂溶性活性成分が、カロテノイド、特にβ−カロテン、リコペン、ルテイン、ビキシン、アスタキサンチン、アポカロテナール、β−アポ−8’−カロテナール、β−アポ−12’−カロテナール、カンタキサンチン、クリプトキサンチン、シトラナキサンチンおよびゼアキサンチンであることを特徴とする請求項1に記載の組成物。
- 前記組成物が、乾燥物質における組成物全体を基準として0.1〜30重量%の間のカロテノイドを含むことを特徴とする請求項2に記載の組成物。
- 1つのカロテノイドがβ−カロテンであることを特徴とする請求項2または3に記載の組成物。
- 前記組成物が、少なくとも1つの付加的な植物ガムをさらに含むことを特徴とする請求項1〜4のいずれか一項に記載の組成物。
- 前記付加的な植物ガムが、アカシアガムであることを特徴とする請求項5に記載の組成物。
- 前記組成物が、少なくとも1つの加工デンプンをさらに含むことを特徴とする請求項5または6に記載の組成物。
- 前記加工デンプンが、食品用OSA加工デンプンであることを特徴とする請求項7に記載の組成物。
- 前記組成物が、1つまたは複数のオリゴ糖をさらに含むことを特徴とする請求項7または8に記載の組成物。
- 前記オリゴ糖がマルトデキストリンであることを特徴とする請求項9に記載の組成物。
- 以下のステップ:
I) ガティガムおよび場合により1つまたは複数の付加的な植物ガムを水中に溶解させるステップと、
II) 場合により、少なくとも1つの加工デンプンをステップI)の溶液に添加するステップと、
III) 1つまたは複数の脂溶性活性成分および40重量%未満の油(乾燥物質における組成物全体を基準として)を含み、そして前記脂溶性活性成分がカロテノイドの場合には、有機溶媒をさらに含む有機相を、ステップII)の溶液に添加するステップと、
IV) 30℃と100℃の間、さらに好ましくは45℃と80℃の間、さらに好ましくは50℃と70℃の間の温度において、ステップIII)の混合物を乳化させるステップと、
V) 前記有機溶媒を減圧下で蒸発させるステップと、
VI) 噴霧乾燥、パウダーキャッチまたは他の方法によって前記エマルジョンを乾燥させるステップと
を含む、請求項1〜10のいずれか一項に記載の組成物の製造方法。 - [請求項11]
