本発明で用いられる油性溶媒は、好適に、前記油溶性素材の溶媒として使用できるもの、具体的には前記油溶性素材と相溶可能なものであることができる。
本発明で用いられる油性溶媒は、好ましくは、飲食品に添加可能な可食性物質であるか、又は香粧品として人体に適用可能な物質である。
菜種油、コーン油、パーム油、大豆油、オリーブ油、ホホバ油、ヤシ油、エレミ樹脂、及びマスティック樹脂等の植物性油脂類;
牛脂、及び豚脂等の動物性油脂類;
ショ糖酢酸イソ酪酸エステル(SAIB)、ロジン、ダンマル樹脂、エステルガム、グリセリン脂肪酸エステル、及びトリグリセリド
等を包含する。
これらはそれぞれ単独で、又は2種以上を任意に組み合わせて用いることができる。
通常、油性成分の含有量が多くなるにつれ、乳化組成物の乳化安定性が低下する傾向がある。しかし、本発明によれば、油性成分の含有量が、例えば、組成物の全量に対して、5質量%以上、6質量%以上、7質量%以上、8質量%以上、9質量%以上、10質量%以上、11質量%以上、12質量%以上、13質量%以上、14質量%以上、15質量%以上、16質量%以上、17質量%以上、18質量%以上、19質量%以上、20質量%以上、21質量%以上、22質量%以上、23質量%以上、24質量%以上、25質量%以上であっても、乳化安定性に優れる乳化組成物を提供できる。
しかしながら、本発明によれば、油性成分として、動植物、又は微生物から溶媒抽出された油性成分を含有する場合であっても、乳化安定性に優れる乳化組成物を提供することができる。
前記傾向は、乳化組成物中の「アセトン不溶物」の含有量が、組成物の全量に対して、0.025質量%以上、更には0.04質量%以上、より更には0.06質量%以上、特には0.1質量%以上となる場合に特に顕著になる。
しかしながら、本発明によれば、乳化組成物中の「アセトン不溶物」の含有量が、上記含有量である場合においても、乳化安定性に優れる乳化組成物を提供することができる。
例えば、アセトン不溶物の含有量が1質量%である油性成分を、10質量%含有する乳化組成物であれば、乳化組成物におけるアセトン不溶物の含有量は0.1質量%であると算出できる。

ガティガムは、シクンシ科ガティノキ(Anogeissus Latifolia)の樹液(分泌液)に由来する多糖類であり、増粘安定剤(食品添加物)として公知の多糖類である。本発明で使用するガティガムは商業的に入手可能であり、例えば、三栄源エフ・エフ・アイ株式会社の「ガティガムRD」を挙げることができる。

本発明の低分子ガティガムは、例えば、以下に説明する製造方法、又はこれに類似する方法により製造できる。本発明の低分子ガティガムの製造方法は、原料であるガディガムを低分子化処理する工程を含む。原料であるガディガムとしては、商業的に入手可能なガティガムを使用できる。
市場で流通しているガティガムの重量平均分子量は、通常、1.1×106~2×106の範囲内である。原料であるガディガムとしては、目的とする分子量のガティガムが製造可能であれば特に制限されず、その一部に低分子量のガティガムを元々含有していてもよい。
当該製造方法における低分子化処理の方法は、特に限定されないが、その好適な例は、加熱分解処理、酸分解処理、及び酵素分解処理からなる群より選択される1種以上の処理方法等の、水の存在下での低分子化処理方法を包含する。
通常、処理温度が高いほど、より重量平均分子量が小さいガティガムが得られる。
当該加熱分解処理の処理温度は、具体的には、例えば、60~200℃の範囲内、及び好ましくは80~200℃の範囲内であることができる。
通常、処理時間が長いほど、より重量平均分子量が小さいガティガムが得られる。
当該加熱分解処理の処理時間は、具体的には、例えば、30秒~8時間の範囲内であることができる。なお、当該時間は、加熱分解処理の処理温度に応じて適宜選択することができる。例えば、処理温度が高い場合は、処理時間を短くするなど適宜選択できる。
加熱分解処理は、例えば、pH5以下のpH条件で、好適に実施できる。
当該酸は、1種を単独で、又は2種以上を組み合わせて使用できる。
通常、処理温度が高いほど、より重量平均分子量が小さいガティガムが得られる。
当該酸分解処理の処理温度は、例えば、60~200℃の範囲内であることができる。
通常、処理時間が長いほど、より重量平均分子量が小さいガティガムが得られる。

酸分解処理は、例えば、pH4以下の条件で、好適に実施できる。
当該酵素は、1種を単独で、又は2種以上を組み合わせて使用できる。
当該酵素処理の条件(例:温度、時間、pH、及び添加物)は、使用される酵素に応じて適宜選択することができる。
本発明の乳化組成物におけるガティガムの含有量は、例えば、0.5~20質量%、0.5~15質量%、0.5~13質量%、0.8~20質量%とすることができ、好ましくは0.8~13質量%、より好ましくは1~13質量%、更に好ましくは1~10質量%、更により好ましくは1.5~9質量%、特に好ましくは1.5~8質量%、特により好ましくは1.5~7質量%、及び最も好ましくは2~7質量%の範囲内である。
また、本発明の乳化組成物におけるガティガムの含有量は、油性成分100質量部に対して、例えば1~1000質量部、1~800質量部が挙げられ、好ましくは3~1000質量部、より好ましくは4~1000質量部、更に好ましくは5~800質量部、更により好ましくは8~500質量部、特に好ましくは10~500質量部、及び最も好ましくは10~400質量部の範囲内である。
また、好適な一態様として、乳化組成物における油性成分の含有量が5質量%を超える場合、油性成分100質量部に対するガティガムの含有量は、3~150質量部であることが好ましく、より好ましくは4~100質量部、更に好ましくは5~80質量部、更により好ましくは8~70質量部、及び特に好ましくは10~50質量部の範囲内である。
また、好適な一態様として、乳化組成物における油性成分の含有量が5質量%以下である場合、油性成分100質量部に対するガティガムの含有量は、例えば15~1000質量部が挙げられ、20~1000質量部であることが好ましく、より好ましくは30~800質量部、更に好ましくは50~600質量部、更により好ましくは50~500質量部、特に好ましくは60~500質量部、及び最も好ましくは60~450質量部の範囲内である。
サポニンはサポゲニンをアグリコンとする配糖体の総称である。本発明ではサポニンとして、サポニンを多く含む植物抽出物を使用することもできる。植物抽出物は、例えば、キラヤ抽出物、ユッカ抽出物、高麗人参抽出物、大豆抽出物、茶種子抽出物、及びエンジュ抽出物等が挙げられる。
本発明では、前記サポニンの含有量の範囲内において、乳化組成物における油性成分の含有量に応じて、適宜、サポニンの含有量を調整することができる。
例えば、乳化組成物における油性成分の含有量が0.1~5質量%である場合、ガティガム100質量部に対するサポニンの含有量は、好ましくは0.05~5質量部であり、より好ましくは0.08~4質量部、更に好ましくは0.1~3質量部、更により好ましくは0.1~2質量部、特に好ましくは0.15~1.8質量部、特により好ましくは0.15~1.6質量部、及び最も好ましくは0.15~1.2質量部である。
一方、乳化組成物における油性成分の含有量が5質量%を超える場合、ガティガム100質量部に対するサポニンの含有量は、例えば、1~30質量部、好ましくは1.5~30質量部、より好ましくは1.5~29質量部、更に好ましくは2~28質量部、更により好ましくは2.5~28質量部、特に好ましくは2.8~25質量部、特により好ましくは3~20質量部、及び最も好ましくは4~18質量部の範囲内である。
例えば、乳化組成物における油性成分の含有量が0.1~5質量%である場合、乳化組成物におけるサポニンの含有量は、好ましくは0.0005~0.1質量%であり、より好ましくは0.001~0.08質量%、更に好ましくは0.005~0.08質量%、更により好ましくは0.008~0.07質量%、及び最も好ましくは0.01~0.05質量%の範囲内である。
また、乳化組成物における油性成分の含有量が5質量%を超える場合、乳化組成物におけるサポニンの含有量は、好ましくは0.01~3質量%であり、より好ましくは0.05~2.5質量%、更に好ましくは0.08~2質量%、更により好ましくは0.08~1.5質量%、及び最も好ましくは0.1~1.2質量%の範囲内である。
乳化組成物における乳化粒子のメジアン径(体積基準)は、限定はされないが、4μm以下とすることができ、好ましくは2.5μm以下であり、より好ましくは2μm以下であり、更に好ましくは1.5μm以下、特に好ましくは1μm以下である。上記のメジアン径(体積基準)は、限定はされないが、水、ガティガム及びサポニンを含有する水相と、油性成分を含有する油相とを、3000rpmで3分間撹拌する等の条件により混合した場合に得られることが好ましい。
当該メジアン径(体積基準)の下限は特に制限されず、目的とする乳化組成物に応じて適宜、調整することが可能である。当該メジアン径(体積基準)の下限は、例えば、0.05μm以上が挙げられる。
本明細書において、乳化組成物における乳化粒子のメジアン径(体積基準)は、以下により測定される。Microtrac MT3000EX-II(マイクロトラック・ベル社)等のレーザー回折散乱式粒度分布測定装置を用いて、試料の粒度分布を測定し、体積基準の累積粒度分布曲線を得る。得られた累積粒度分布曲線における、50%累積時の微小粒子側から見た粒子径で測定される粒度分布における累積体積50容量%の体積累積粒径(D50)が、乳化組成物における乳化粒子のメジアン径である。乳化組成物における乳化粒子のメジアン径(体積基準)は、後述の実施例の項目において詳細に記載される。
均質化処理を行った場合の乳化組成物における乳化粒子のメジアン径(体積基準)は、限定はされないが、2.5μm以下とすることができ、好ましくは2μm以下であり、より好ましくは1.8μm以下であり、更に好ましくは1.6μm以下、更により好ましくは1.3μm以下、特に好ましくは1μm以下、最も好ましくは0.8μm以下である。
均質化処理を行った場合の乳化組成物における乳化粒子の3.6μm以上の粒子径の頻度は、限定はされないが、60%以下とすることができ、好ましくは40%以下であり、より好ましくは15%以下であり、更に好ましくは10%以下であり、更により好ましくは8%以下であり、更により好ましくは5%以下であり、特に好ましくは3%以下であり、最も好ましくは2%以下である。限定はされないが、本発明の乳化組成物は、長期保存安定性に優れるため、60℃で7日間保存した場合であっても上記の乳化組成物における乳化粒子の3.6μm以上の粒子径の頻度を維持できることが好ましい。
均質化処理を行った場合の乳化組成物における乳化粒子の1.3μm以上の粒子径の頻度は、限定はされないが、60%以下とすることができ、好ましくは40%以下であり、より好ましくは30%以下であり、更に好ましくは15%以下であり、更により好ましくは10%以下であり、特に好ましくは8%以下であり、特により好ましくは5%以下であり、殊更に好ましくは3%以下であり、最も好ましくは2%以下である。限定はされないが、本発明の乳化組成物は、長期保存安定性に優れるため、60℃で7日間保存した場合であっても上記の乳化組成物における乳化粒子の1.3μm以上の粒子径の頻度を維持できることが好ましい。
また、乳化組成物中の油性成分の含有量が5質量%を超える場合においても、乳化粒子が上記メジアン径を有する、乳化組成物を調製することができる。
この場合、乳化組成物におけるメジアン径の下限値は特に制限されないが、例えば、0.3μm以上を挙げることができる。
従来、ガティガムを用いた乳化組成物を水性溶媒に溶解又は分散した場合は、濁りが付与される場合があった。しかしながら、本発明の1つの実施態様によれば、水性媒体に透明に溶解又は分散する、透明タイプの乳化組成物を提供することができる。透明タイプの乳化組成物は、例えば、油性成分の含有量を10質量%以下、好ましくは5質量%以下とすること等により、調製することができる。
この場合、乳化組成物におけるメジアン径の下限値は特に制限されないが、例えば、0.05μm以上を挙げることができる。
本発明の乳化組成物は、好ましくは、多価アルコールを含有することができる。これにより、乳化組成物の保存安定性を向上させることができる。
本発明で使用できる多価アルコールの例としては、グリセリン、ジグリセリン、トリグリセリン、ポリグリセリン、プロピレングリコール、ジプロピレングリコール、1,3-ブチレングリコール、エチレングリコール、ポリエチレングリコール、ソルビトール(D-ソルビトール)、キシリトール、マルチトール、エリスリトール、マンニトール、キシロース、グルコース、ラクトース、マンノース、オリゴトース、果糖ブドウ糖液糖、及びシュクロース等が挙げられる。
これらの多価アルコールは、それぞれ単独で、又は2種以上を任意に組み合わせて用いることができる。
本発明において多価アルコールは、好ましくは、プロピレングリコール、若しくはグリセリン、又はこれらの組合せである。
乳化組成物に多価アルコールを含有させると、乳化組成物の乳化粒子が大きくなる場合があるが、本発明によれば、乳化粒子が上記範囲のメジアン径を有する乳化組成物を提供することができる。
本発明の乳化組成物のpHは、配合成分の種類や含有量、剤形等により適宜調整され、限定はされないが、例えば、2~8の範囲、2.5~7.5の範囲、又は3~7の範囲であることができる。また、本発明の乳化組成物が液体状である場合は、pHが2~4、好ましくはpHが2.5~3.5の範囲内であることが望ましい。乳化組成物のpHを前記範囲に調整するために、必要に応じて有機酸及び/又は無機酸を使用することができる。有機酸及び/又は無機酸の種類は特に制限されない。
かかる有機酸及び/又は無機酸の例としては、クエン酸、フィチン酸、アスコルビン酸、リン酸、乳酸、アジピン酸、グルコン酸、コハク酸、酢酸、酒石酸、フマル酸、リンゴ酸、及びピロリン酸等が挙げられる。これらの有機酸及び/又は無機酸は、それぞれ単独で、又は2種以上を任意に組み合わせて用いることができる。
本発明において好ましい有機酸及び/又は無機酸は、クエン酸、フィチン酸、アスコルビン酸、リン酸、及び乳酸からなる群から選択される1種以上である。
本発明は、以下に記載の乳化組成物の製造方法にも関する。
水、油性成分、ガティガム、及びサポニンを含有し、且つ、前記サポニンの含有量が、前記ガティガム100質量部に対し、0.05~30質量部である混合液を調製する工程、及び、

本発明の乳化組成物、又は前記粉末状、顆粒状、若しくは錠剤状の組成物は、油性成分の種類等に応じて、各種用途に用いることができる。例えば、油性成分が色素である場合、色素製剤として適用でき、油性成分が香料である場合、香料製剤として適用できる。油性成分が生理活性物質である場合、生理活性物質製剤として適用できる。また、本発明の乳化組成物、又は前記粉末状、顆粒状、若しくは錠剤状の組成物は、飲料等の水性媒体に適度な曇りを付与する曇り剤(別名、濁り剤、クラウディ)として適用することもできる。
色素製剤(乳化カロテノイド色素製剤を包含する)における色素含量は特に制限されないが、例えば、色価(E10% 1cm)が100~800、好ましくは200~700、及びより好ましくは300~600の範囲内である。
本明細書中、「色価(E10% 1cm)」とは、色素の分野の当業者が通常理解する通り、色素製剤等の色素含有物の可視部での極大吸収波長における吸光度を10w/v%溶液の吸光度に換算した数値(E10% 1cm)で表される。
本発明において、当該色価(E10% 1cm)は、日本国の食品添加物公定書 第9版「18.色価測定法」に従って決定される数値である。
本発明はまた、前記乳化組成物、又は前記粉末状、顆粒状、若しくは錠剤状の組成物を含有する水性組成物に関する。
当該水性組成物の種類は、特に制限されないが、例えば、飲食品、香粧品、医薬品、医薬部外品、衛生用日用品、又は飼料、好ましくは飲食品、及びより好ましくは飲料であることができる。
当該水性組成物における、本発明の乳化組成物、又は前記粉末状、顆粒状、若しくは錠剤状の組成物の含有量は当該組成物の種類及び用途等によって異なることができるが、例えば、0.001~5質量%の範囲内、又は0.01~1質量%の範囲内であることができる。
飲食品の種類は特に制限されないが、具体的には、当該飲食品の例は、
乳飲料、乳酸菌飲料、炭酸飲料、果実飲料(例:果汁飲料、果汁入り清涼飲料、果汁入り炭酸飲料、果肉飲料)、野菜飲料、野菜及び果実飲料、リキュール類等のアルコール飲料、コーヒー飲料、粉末飲料、スポーツ飲料、サプリメント飲料等の飲料類;

本発明における乳化組成物の乳化安定性を向上させる方法は、以下の好適な態様を包含する。
前記ガティガムを含有する乳化組成物の乳化安定性を向上させる方法であって、
1)水、油性成分、前記ガティガム、及び前記サポニン
を含有する混合液を調製する工程;並びに
2)前記混合液を均質化処理し、乳化組成物を調製する工程

前記メジアン径又は粒子径の頻度は、以下に示す条件で、乳化組成物の粒度分布を測定した。

乳化組成物の乳化粒子径を評価する指標の一つとして、濁度がある。例えば、乳化粒子径が1μm以下である場合、下記濁度の値が小さい程、乳化粒子径が小さいことを意味する。
本試験例では、乳化組成物における濁度を測定することで、乳化組成物の安定性を評価した。
前記「0.1%E(720nm)」は、各試料(乳化組成物)をイオン交換水で0.1%水溶液に希釈し、当該希釈液の720nmの濁度を以下に示す条件で測定した。

乳化組成物は各表に示す処方に従って製造した。
表1に示す油相材料を混合、及び100℃に加温し、油相を調製した。水相(1)に油相を添加し、3000rpmで3分間撹拌し、混合液を調製した。混合液に水相(2)を添加し、1000rpmで1分間撹拌した。次いで、高圧ホモジナイザー(ホモジナイザー15MR-8TA、MANTON-GAULIN社製)で均質化処理した(条件350kg/cm2、4回)。
乳化組成物中のアセトン不溶物の含有量は0.21質量%である。本実験例1で調製した乳化組成物(実施例及び比較例)のpHは2.5~3.5の範囲内である。
一方、ガティガム、及びガティガム100質量部に対して特定量のサポニンを含有する実施例1-1~1-3は、油相及び水相の混合のみで2μm以下のメジアン径を有する乳化組成物が得られた。更に、均質化処理を行うことで、メジアン径がより小さい乳化組成物が調製された。これにより、ガティガム及び、ガティガムに対して特定量のサポニンを含有することで、乳化安定性に優れる乳化粒子を調製できることが確認された。
これらは、表4に示すように、混合液又は水相(2)混合後の乳化状態が不十分であり、高い乳化安定性を有する組成物を提供できなかった。
乳化組成物は各表に示す処方に従って製造した。
表5に示す油相材料を混合し、油相を調製した。水相(1)に油相を添加し、3000rpmで3分間撹拌し、混合液を調製した。当該混合液を高圧ホモジナイザー(ホモジナイザー15MR-8TA、MANTON-GAULIN社製)で均質化処理した(条件500kg/cm2、5回)。次いで、水相(2)を添加し、1000rpmで1分間撹拌した。
本実験例2で調製した乳化組成物(実施例及び比較例)のpHは2~4の範囲内であり、アセトン不溶物含量は0.025質量%未満である。
乳化組成物の乳化粒子径が例えば、1μm以下の場合は、濁度0.1%E(720nm)の数値は乳化粒子径と比例する。従って、本結果より、ガティガムに特定量のサポニンを併用することで、乳化組成物の乳化粒子径が小さくなることが示された。
乳化組成物は各表に示す処方に従って製造した。
表7に示す油相材料を混合、及び80℃に加温し、油相を調製した。水相(1)に油相を添加し、3000rpmで3分間撹拌し、混合液を調製した。混合液に水相(2)を添加し、3000rpmで1分間撹拌した。次いで、高圧ホモジナイザー(ホモジナイザー15MR-8TA、MANTON-GAULIN社製)で均質化処理した(条件560kg/cm2、4回)。
乳化組成物は表9に示す処方に従って製造した。
表9に示す油相材料を50℃まで加熱し、油相を調製した。水相(1)に油相を添加し、3000rpmで3分間攪拌し、混合液を調製した。当該混合液に水相(2)を添加、及び3000rpmで1分間攪拌した。次いで、高圧ホモジナイザー(ホモジナイザー15MR-8TA、MANTON-GAULIN社製)で均質化処理した(条件560kg/cm2、4回)。
実施例1-2の乳化組成物を用いて、カニ風味蒲鉾を着色した。
すり身(白身魚すり身(株式会社 大冷製)60質量部に対し、氷水30質量部、及び実施例1-2の乳化組成物希釈液10質量部を加え、乳鉢で均一になるまで混合し、着色混合物を調製した。着色混合物における、実施例1-2の乳化組成物含量は2.1質量%である。カニ風味蒲鉾(無着色部)の上面に前記着色混合物を塗布し、95℃で15分間蒸した後、真空パック包装した。次いで、90℃で1分間の加熱殺菌(ボイル殺菌)を行った。
実施例1-2の乳化組成物を用いて、着色されたビビンバ炒飯を調製した。
表11の処方に従い、水洗した精米に、水、及び実施例1-2の乳化組成物を混合し、炊飯した。次いで、表12の処方に従いビビンバ炒飯を調製した。
実施例1-2の乳化組成物を用いて、着色されたキムチを調製した。
白菜漬68gに対して実施例1-2の乳化組成物を0.2g添加、及び混合して、着色キムチを調製した。
表13の処方に従い、実施例1-2の乳化組成物を用いて、着色された中華饅頭を調製した。砂糖を溶解した温水に、ドライイーストを添加して、5~10分間予備発酵させた。当該イースト液を、薄力粉に少しずつ添加し、そぼろ状になるまで混合した。実施例1-2の乳化組成物を添加後、表面に光沢が出るまで生地を捏ね、次いで、1~2時間発酵させた。
乳化組成物は各表に示す処方に従って製造した。
表13に示す油相材料を混合し、及び80℃まで加熱し、油相を調製した。水相(1)に油相を添加し、3000rpmで3分間撹拌し、混合液を調製した。混合液に水相(2)を添加し、3000rpmで1分間撹拌した。次いで、高圧ホモジナイザー(ホモジナイザー15MR-8TA、MANTON-GAULIN社製)で均質化処理した(条件500kg/cm2、4回)。
乳化組成物中のアセトン不溶物の含有量は1.8質量%である。本実験例9で調製した乳化組成物(実施例及び比較例)のpHは2.5~3.5の範囲内であった。
一方、低分子ガティガム、及び低分子ガティガム100質量部に対して特定量のサポニンを含有する実施例9-1及び9-2は、油相及び水相の混合のみで2μm以下のメジアン径を有する乳化組成物が得られた。更に、均質化処理を行うことで、メジアン径がより小さい乳化組成物が調製された。本結果より、低分子ガティガム、及び低分子ガティガムに対して特定量のサポニンを含有することで、乳化安定性に優れる乳化粒子を調製できることが確認された。
表15に示す処方に従い、乳化組成物を製造し、粉末化試験を実施した。
(粉末状の乳化組成物の製造)
油相材料を混合、及び80℃まで加熱し、油相を調製した。水相(1)に油相を添加し、3000rpmで3分間撹拌し、混合液を調製した。次いで、高圧ホモジナイザー(ホモジナイザー15MR-8TA、MANTON-GAULIN社製)で均質化処理した(条件500kg/cm2、4回)。均質化処理後の液に、粉末化基材としてデキストリンを含有する水相(2)を添加し、1500rpmで1分間撹拌した。得られた混合液を噴霧乾燥機(スプレードライヤー、APV Nordic Anhydro社)を用いて入口温度:160℃、出口温度:85-90℃、20000~25000rpmの条件で噴霧乾燥し、粉末状乳化組成物を得た。
Claims (11)
- 水、油性成分、ガティガム、及びサポニンを含有し、且つ、
前記サポニンの含有量が、前記ガティガム100質量部に対し、0.05~30質量部である、
乳化組成物。 - 前記油性成分100質量部に対する、前記サポニン含量が0.01~10質量部である、請求項1に記載の乳化組成物。
- 前記油性成分が、油溶性色素、油溶性香料、油溶性生理活性物質、及び油性溶媒からなる群から選択される1種以上を含有する、請求項1又は2に記載の乳化組成物。
- 前記油性成分がカロテノイド色素を含有するものである、請求項1~3のいずれか一項に記載の乳化組成物。
- 前記油性成分が油溶性香料を含有するものである、請求項1~3のいずれか一項に記載の乳化組成物。
- 前記乳化組成物の乳化粒子のメジアン径が4μm以下である、請求項1~5のいずれか一項に記載の乳化組成物。
- 液体状、粉末状、顆粒状、又は錠剤状である、請求項1~6のいずれか一項に記載の乳化組成物。
- 水、油性成分、ガティガム、及びサポニンを含有し、且つ、前記サポニンの含有量が、前記ガティガム100質量部に対し、0.05~30質量部である混合液を調製する工程、及び
前記混合液を均質化処理する工程、
を含有する、乳化組成物の製造方法。 - 請求項8に記載の乳化組成物を粉末化処理する工程、
を含有する、粉末状、顆粒状、又は錠剤状組成物の製造方法。 - 請求項1~7のいずれか一項に記載する乳化組成物、又は、請求項9に記載の粉末状、顆粒状、若しくは錠剤状組成物を、水性溶媒に溶解又は分散する工程、
を含有する、飲食品、香粧品、医薬品、医薬部外品、衛生用日用品、又は飼料からなる群から選択される組成物の製造方法。 - 請求項1~7のいずれか一項に記載の乳化組成物、又は、請求項9に記載の粉末状、顆粒状、若しくは錠剤状組成物を含有する、飲食品、香粧品、医薬品、医薬部外品、衛生用日用品、又は飼料。
