Abstract
【解決手段】 甜菜を煮詰めた糖分の抽出から雑味を除去し、上澄濃縮液を沸点以下の高温水で煮詰め、濃縮液が糸をひく程度の粘性をもった段階で粗糖を添加し、粗糖添加後の溶液が焦げ付く手前まで加熱し、溶液が焦げ付く手前で加熱を停止して攪拌し、流動性をもちつつ粘性がでた時点で、当該溶液を固化用容器に移し替えて冷却する。粗糖は、砂糖の結晶を固形化する働きがある。これを添加することで、加圧処理をせずに冷却だけで甜菜を原料とする黒砂糖の製造が可能となる。

Claims (1)
- スライスした甜菜を高温水で煮詰めて糖分を抽出し、
この糖分の抽出液を、甜菜の繊維成分の除去後に沸点以下の高温水で煮詰めて糖分の濃縮液を得、
この濃縮液に炭酸カルシウムを加えた後、
炭酸カルシウムの反応沈殿物を除去した上澄濃縮液を、沸点以下の高温水で煮詰め、
濃縮液が糸をひく程度の粘性をもった段階で粗糖を添加し、
粗糖添加後の溶液が焦げ付く手前まで加熱し、
溶液が焦げ付く手前で加熱を停止して攪拌し、
粘性がでた時点で、当該溶液を固化用容器に移し替えることを特徴とする甜菜を用いた固形黒砂糖の製造方法。
