Abstract
【解決手段】(A)タンニン/Brix比が200〜265(mg/100mL/重量%)の烏龍茶抽出液を配合してなり、非重合体カテキン類の含有量が0.06〜0.5重量%である容器詰烏龍茶飲料。

Description
また、非重合体カテキン類の含有量が0.06〜0.5重量%を含有し、非重合体カテキン類の非エピ体/(非エピ体+エピ体)が0.4〜0.7、非重合体カテキン類/タンニン量の重量比率が0.30〜0.80であり、飲料の色a*が6〜12である容器詰烏龍茶飲料を提供するものである。
烏龍茶葉としては、武夷岩茶、鉄観音、水仙、烏龍、包種、色種等が挙げられ、鉄観音、水仙、烏龍が好ましい。
抽出溶剤としては、水、エタノール等の有機溶剤、水とエタノール等の有機溶剤混合物等が挙げられ、水が最も好ましい。
また、非重合体カテキン量とタンニン量の比率を0.30〜0.80、好ましくは、0.40〜0.80、更に好ましくは、0.40〜0.70にすることにより、また、烏龍茶由来のえぐ味をマスキングすることができる。
タンニン/Brix含有量比を200〜265とする、また、非重合体カテキン量とタンニン量の比率を0.30〜0.80ための最も好ましい製造条件としては、烏龍茶葉と抽出溶剤の混合比率は茶葉に対して40〜60倍、抽出時間は1〜60分、後処理としてはゼータ膜等の精密濾過膜で濾過することが挙げられる。
非重合体カテキン類中の非エピ比率(非エピ体/(非エピ体+エピ体))は、0.40〜0.70、更に0.45〜0.65であると、長期保存時の色調の変化が抑制される点で好ましい。
フィルター(0.8μm)で濾過し、次いで蒸留水で希釈した容器詰めされた飲料を、島津製作所製、高速液体クロマトグラフ(型式SCL−10AVP)を用い、オクタデシル基導入液体クロマトグラフ用パックドカラム L−カラムTM ODS(4.6mm×250mm:財団法人 化学物質評価研究機構製)を装着し、カラム温度35℃でグラジエント法により行った。移動相A液は酢酸を0.1mol/L含有の蒸留水溶液、B液は酢酸を0.1mol/L含有のアセトニトリル溶液とし、試料注入量は20μL、UV検出器波長は280nmの条件で行った。
タンニン量の測定は酒石酸鉄法により、標準液として没食子酸エチルを用い、没食子酸の換算量として求める(参考文献:「緑茶ポリフェノール」飲食料品用機能性素材有効利用技術シリーズNo.10)。試料5mLを酒石酸鉄標準溶液5mLで発色させ、リン酸緩衝液で25mLに定溶し、540nmで吸光度を測定し、没食子酸エチルによる検量線からタンニン量を求める。酒石酸鉄標準液の調製:硫酸第一鉄・7水和物100mg、酒石酸ナトリウム・カリウム(ロッシェル塩)500mgを蒸留水で100mLとする。リン酸緩衝液の調製:1/15mol/Lリン酸水素二ナトリウム溶液と1/15mol/Lリン酸二水素ナトリウム溶液を混合しpH7.5に調整する。
ブリックス値は、屈折率計で測定した値を用いることとする。屈折率計としては(RX−5000α;ATAGO社製を使用した。
重曹水でpHを8.5に調整した90℃の湯2000Lに烏龍茶葉33.3kg(茶葉に対して60倍)を添加し、その後、ニーダー(回転数13r/min、5分間)で撹拌、抽出し、粗抽出液を得た。その後、フィルター(20メッシュ)及び遠心分離により、茶葉の残渣を除去し、烏龍茶抽出液を得た。これをイオン交換水で約1.2倍に希釈して烏龍茶抽出液1を得た。烏龍茶抽出液1中のタンニンは102.4mg/100mL、Brixは0.42重量%、タンニン/Brix比は244(mg/100mL/重量%)であった。
重曹水でpHを8.5に調整した90℃の湯2000Lに烏龍茶葉133.3kg(茶葉に対して15倍)を添加し、その後、ニーダー(回転数13r/min、5分間)で撹拌、抽出し、粗抽出液を得た。その後、フィルター(20メッシュ)及び遠心分離により、茶葉の残渣を除去し、烏龍茶抽出液を得た。これをイオン交換水で約5倍に希釈して烏龍茶抽出液3を得た。烏龍茶抽出液3中のタンニンは101.5mg/100mL、Brixは0.50重量%、タンニン/Brix比は203(mg/100mL/重量%)であった。
重曹水でpHを8.5に調整した100℃の湯2000Lに烏龍茶葉20kg(茶葉に対して100倍)を添加し、その後、ニーダー(回転数13r/min、5分間)で撹拌、抽出し、粗抽出液を得た。その後、フィルター(20メッシュ)及び遠心分離により、茶葉の残渣を除去し、烏龍茶抽出液2を得た。烏龍茶抽出液2中のタンニンは98.3mg/100mL、Brixは0.35重量%、タンニン/Brix比は281(mg/100mL/重量%)であった。
Claims (3)
- (A)タンニン/Brix比が200〜265(mg/100mL/重量%)の烏龍茶抽出液を配合してなり、非重合体カテキン類の含有量が0.06〜0.5重量%である容器詰烏龍茶飲料。
- 非重合体カテキン類の非エピ体/(非エピ体+エピ体)が0.4〜0.7である請求項1記載の容器詰烏龍茶飲料。
- 非重合体カテキン類の含有量が0.06〜0.5重量%を含有し、非重合体カテキン類の非エピ体/(非エピ体+エピ体)が0.4〜0.7、非重合体カテキン類/タンニン量の重量比率が0.30〜0.80である容器詰烏龍茶飲料。
