Abstract
Μέθοδος για την παραγωγή κεφίρ, που περιλαμβάνει ρύθμιση υποβληθέντος σε καθαρισμό αγελαδινού γάλακτος ως προς την περιεκτικότητά του σε στερεά συστατικά πραγματοποιούμενη δι'υπερδιηθήσεως του γάλακτος σε θερμοκρασία 50-55 βαθμούς Κελσίου μέχρις ότου το ποσοστό των στερεών συστατικών αυξάνεται στο ρυθμιζόμενο γάλα κατά 0,5-4,0 κ.β. περαιτέρω θερμική κατεργασία σε θερμοκρασία 140 βαθμούς Κελσίου, προσθήκη στο ρυθμισθέν γάλα μαγιάς παρασκευασμένης με τη χρησιμοποίηση μυκήτων κεφίρ, ζύμωση του προκύπτοντος μίγματος μέχρι pH 5,0-4,7 και παραμονή του ζυμωθέντος μίγματος σε θερμοκρασία 18-20 βαθμούς κελσίου μέχρι pH 4,7-4,5 που ακολουθείται από συσκευασία. ω
