Abstract
La présente invention concerne un procédé de préparation de produits hydrolysés d'une céréale complète et de tels produits obtenus. Une céréale complète est traitée par un enzyme protéolytique pour transformer les protéines insolubles dans l'eau en produits solubles dans l'eau et en outre on traite le contenu en amidon par une amylase libre de tout autre enzyme d'hydrolysation d'hydrates de carbone pour former des produits d'amidon solubles dans l'eau sous forme de mono et disaccharides, et on enlève la fraction du son et l'eau pour obtenir un produit sec, semi-humide ou liquide très concentré. L'invention est utilisable dans l'industrie alimentaire.
