Abstract

Procédé de fabrication du D-glucose et d'hydrolysats d'amidon suivant lequel on stérilise un hydrolysat partiel avec une valeur ED de 15 à 35 %, préalablement purifié, on en règle le pH à 4,0-6,0, on introduit une dose d'enzyme libre dans le substrat ainsi obtenu, on soumet le substrat catalysé à l'enzyme dans un ou plusieurs récipients contenant des complexes d'enzyme et de support à diffusion non inhibée. On opère le traitement d'hydrolyse à 326-338 degrés K jusqu'à une valeur ED initiale de 35-80 %, on conduit l'hydrolyse à son point final par charges successives ou traitement continu à 1 ou plusieurs étages, on inactive l'enzyme à chaud, on purifie l'hydrolysat inactivé et on le transforme par cristallisation, séchage ou granulation.
