COMPRENDE LAS SIGUIENTES OPERACIONES: PRIMERA, EN UNA PRIMERA FASE DE PRETRATAMIENTO SE EXTRAE LA SANGRE QUE PUEDA CONTENER EL HIGADO FRESCO DE RAPE; SEGUNDA, EN UNA FASE DE ENVASADO AL VACIO SE ENVASA EL HIGADO EN BOLSAS O RECIPIENTES HERMETICOS; TERCERA, EL HIGADO SE SOMETE A UNA FASE DE CALENTAMIENTO UNA VEZ QUE HA SIDO ENVASADO AL VACIO; Y POR ULTIMO, EL HIGADO DE RAPE CALENTADO SE SOMETE A UN PROCESO DE CONGELACION HASTA QUE QUEDA TOTALMENTE CONGELADO. LA FASE DE EXTRACCION DE LA SANGRE SE LLEVA A EFECTO LAVANDO EL HIGADO DE RAPE EN UNA SOLUCION ACUOSA DE SAL DE MESA.
