Abstract

1,274,385. Pickling. BRITISH FOOD MFG. INDUSTRIES RESEARCH ASSOCIATION. 19 April, 1971 [20 March, 1970; 14 Aug., 1970], Nos. 13621/70 and 39364/70. Heading A2D. A method of pickling a product comprises subjecting the product to heating to a temperature not exceeding 92‹C by microwaves or by immersion in a hot liquid and thereafter preserving the product in pickling liquor. The hot liquid may be water or a weak aqueous salt solution. The method is exemplified by the treatment of onions, gherkins and cauliflower. The pickling liquor is a solution of acetic acid.
