PROCEDIMIENTO PARA INHIBIR LA PERDIDA DE HUMEDAD DE CAMARONES CRUDOS CONGELADOS AL DESCONGELARLOS O COCERLOS.CONSISTE EN LAS OPERACIONES SIGUIENTES: 1) FORMAR UNA SOLUCION, AÑADIENDO TRIPOLIFOSFATO SODICO, NA5P3O10, A AGUA EN CANTIDADES DE, AL MENOS, 0,5 EN PESO HASTA SATURACION; 2) AÑADIR A LA SOLUCION PIROFOSFATO ACIDO DE SODIO NA2H2P2O7, PARA OBTENER UN PH EN LA SOLUCION DE 6,2 A 7,1 Y UNA RELACION EN PESO ENTRE EL TRIPOLIFOSFATO SODICO Y EL PIROFOSFATO ACIDO DE SODIO DE 80:20 A 60:40; 3) AÑADIR A LA SOLUCION, OPCIONAL, CLORURO SODICO EN CANTIDADES DE HASTAUN 7 EN PESO; 4) TRATAR LOS CAMARONES EMPAPANDOLOS EN LA SOLUCION RESULTANTE DURANTE UN PERIODO DE 5 MINUTOS A 24 HORAS; 5) CONGELAR LOS CAMARONES TRATADOS PARA CONSERVARLOS; 6) DESCONGELAR Y/O COCER LOS CAMARONES TRATADOS HASTA QUE SE COMPLETA EL TRATAMIENTO; Y 7) RECUPERAR LOS CAMARONES TRATADOS.
