Abstract

1,203,075. Treating egg white. SANOVO FOOD & ENG. Ltd. A.S. SANOVO LEVNEDSMIDLER A.S. 1 Sept., 1967 [2 Sept., 1966], No. 40144/67. Heading A2D. To stabilise the proteins of egg white against heat coagulation during the sterilisation or pasteurisation of the egg white, one or more condensed phosphates are added to the egg white. The egg white is preferably adjusted to a pH of 6-8 before pasteurisation. The condensed phosphate may be sodium tripolyphosphate or a mixture of sodium salts comprising pyrophosphate, tri-tetra-penta-, hexa- and heptapolyphosphates and tri-, tetra and hexametaphosphates. The condensed phosphate may be added in the form of an aqueous solution. The egg white may be used in the making of macaroon and Angel cakes.
