SE ELIMINA EL OXIGENO DE LA PRINCIPAL AÑADIENDO FERMENTO DE LEVADURA Y SE SOMETE A LA SECUNDARIA A UNA MADURACION PROLONGADA. SE JUNTAN LAS DOS CORRIENTES Y SE HACE PASAR A AMBAS NUEVAMENTE A TRAVES DE UNA BIOMASA DE LEVADURA AUTOLIZADA. SE CALIENTA HASTA 55-60 C. TRAS LA FERMENTACION SECUNDARIA SE VUELVE A DIVIDIR EN DOS CORRIENTES, LAS CUALES SON ENRIQUECIDAS INDIVIDUALMENTE CON SUSTANCIAS DE LEVADURA BIOLOGICAMENTE ACTIVAS Y UNA DE LA CORRIENTES SE SOMETE A MADURACION CON LEVADURA ANTES DE ENFRIAR.
