Abstract
PROCEDIMIENTO DE OBTENCION DE CEPAS DE LEVADURA CAPACES DE FERMENTAR RAPIDAMENTE AZUCARES CON PRODUCCION RAPIDA DE DIOXIDO DE CARBONO Y ETANOL. EL PROCEDIMIENTO CONSISTE EN LA OBTENCION DE CEPAS DE LEVADURA QUE FERMENTAN AZUCARES MAS RAPIDAMENTE CON PRODUCCION MAS RAPIDA DE DIOXIDO DE CARBONO Y ETANOL. EN LAS CEPAS SE INCLUYE UN FRAGMENTO DE DNA, PREFERENTEMENTE HOMOLOGO, QUE PERMITE LA EXPRESION DE GENES QUE NORMALMENTE NO SE EXPRESAN EN PRESENCIA DE AZUCARES. A ESTAS CEPAS SE LES HA INTRODUCIDO GENES QUE CODIFICAN UNA ENZIMA GLUCONEOGENICA, ENCONTRANDOSE BAJO EL CONTROL DEL PROMOTOR DEL ALCOHOL DESHIDROGENASA I (ADCI). EL PROMOTOR Y LOS GENES INTRODUCIDOS PROCEDEN DE SACCHAROMYCES CEREVISIAE. ESTE PROCEDIMIENTO SE APLICA PARA LA PRODUCCION DE PAN Y PRODUCTOS RELACIONADOS, ASI COMO EN LA PRODUCCION DE BEBIDAS ALCOHOLICAS U OTROS PRODUCTOS CONTENIENDO ALCOHOL.
