Abstract

Procedimiento para la fermentación continua de microorganismos, con reacción simultánea de sacarosa a isomaltulosa, caracterizado porque a un medio, en el que se cultivan en forma continua microorganismos formadores de isomaltulosa, se agregan en forma, continua soluciones conteniendo sacarosa, el cultivo se realiza en forma en sí conocida, terminada la transformación de la sacarosa se separa la solución de la masa de microorganismos y en forma en sí conocida se purifica y/o se hace cristalizar.
