Abstract
Procédé pour la fabrication de colorants à base de bétalaïne à partir de jus de betterave, ce procédé consistant, dans une première étape, à éliminer du jus les sucres qu'il contient en soumettant ces sucres à une fermentation bactérienne, puis dans une seconde étape, à concentrer le jus fermenté pour en porter le pouvoir colorant à une valeur pouvant aller jusqu'à 400 % de celui du produit de départ, et enfin, subsidiairement à amener le jus concentré à l'état- cristallisé en vue de sa commercialisation.
