Abstract

L'invention concerne un procédé pour la fabrication commerciale du vin. Selon l'invention il consiste d'abord à soumettre le raisin à un éraflage en 12 et un foulage en 13; ensuite à soumettre le raisin à une centrifugation par tamisage en 14 pour séparer le moût des pellicules et des pépins au point que les pellicules et les pépins soient presque totalement dépourvus d'humidité; troisièmement à soumettre en 36 le moût à un processus de séparation pour séparer les colloïdes insolubles du moût pour obtenir un jus pouvant être fermenté; et quatrièmement à fermenter le jus en 40. L'invention s'applique notamment à la production de vin de bonne qualité et à bon marché.
