Abstract

Proceso para la preparación de un alimento rebozado y congelado. El proceso se inicia con un enharinado del alimento a rebozar, continúa con la aplicación a dicho alimento enharinado de una pasta de rebozado preparada, pasta de rebozado que comprende en su composición un derivado de celulosa que coagula en un baño de agua caliente o en presencia de vapor de agua, continúa el proceso con el calentamiento del alimento rebozado y coagulado mediante horneado convencional, microondas o infrarrojos, de modo que la capa de rebozado coagulado no se deshaga al enfriarse, y concluye con el enfriado y congelación del producto anterior. El objetivo de la invención es eliminar la etapa de prefritura de los procesos de rebozado clásicos, que es la más problemática.
