Abstract

Gegenstand der vorliegenden Erfindung ist eine Entnahmevorrichtung für Lebensmittelprodukte, insbesondere Brot- und/oder Backwaren. Diese ist mit einer Vorratskammer (2) und einem Entnahmeraum (3) ausgerüstet, welche durch eine Barrierewand (4) voneinander getrennt sind. Die Lebensmittelprodukte werden mittels einer von einem Bediener beaufschlagten Handhabe (5a, 5b) aus der Vorratskammer (2) über die Barrierewand (4) in den Entnahmeraum (3) befördert. Zu diesem Zweck verfügt die Barrierewand (4) erfindungsgemäß entnahmeraumseitig über eine angeschlossene Auflagefläche (9), welche oberhalb einer Grundfläche des Entnahmeraumes (3) angeordnet ist.

Description

  • Die Erfindung betrifft eine Entnahmevorrichtung für Lebensmittelprodukte, insbesondere Brot- und/oder Backwaren, mit einer Vorratskammer und einem Entnahmeraum, die durch eine Barrierewand voneinander getrennt sind, wobei die Lebensmittelprodukte mittels einer von einem Bediener beaufschlagten Handhabe aus der Vorratskammer über die Barrierewand in den Entnahmeraum befördert werden.
  • Solche Entnahmevorrichtungen sind in verschiedenen Ausgestaltungen im Stand der Technik bekannt, wobei nur beispielhaft auf die DE 20 2005 009 376 U1 oder auf die EP 1 669 009 A1 verwiesen sei. Mit Hilfe derartiger Entnahmevorrichtungen wird bereits eine hygienische Behandlung der Lebensmittelprodukte, insbesondere Brot- oder Backwaren erreicht. Denn die fragliche Ware oder das Lebensmittelprodukt wird erst dann von einem Kunden ergriffen, wenn es von den übrigen Lebensmittelprodukten getrennt ist. Denn für diese Trennung sorgt die Handhabe, mit deren Hilfe das vom Kunden ausgesuchte Lebensmittelprodukt gleichsam ausgesondert und über die Barrierewand in den Entnahmeraum befördert und folglich von den übrigen Lebensmittelprodukten getrennt wird, die in der Vorratskammer verbleiben. Das hat sich bewährt.
  • Im Rahmen der beiden gattungsbildenden Schriften geht es jedoch primär um die Entnahme von Brötchen, also relativ kleinvolumigen Lebensmittelprodukten. Sollen dagegen auf vergleichbare Weise Baguettes oder auch Brote oder Kuchen behandelt werden, können die vorbekannten Entnahmevorrichtungen nicht genutzt werden. Denn sie sind von ihren Abmessungen her auf solche kleinvolumigen Brot- oder Backwaren ausgerichtet. Hier setzt die Erfindung ein.
  • Der Erfindung liegt das technische Problem zugrunde, eine derartige Entnahmevorrichtung für allgemein Lebensmittelprodukte und insbesondere Brot- oder Backwaren so weiter zu entwickeln, dass auch großvolumige und besonders längserstreckte Lebensmittelprodukte einwandfrei vom Vorrat ausgesondert und von einem Kunden manipuliert werden können.
  • Zu Lösung dieser technischen Problemstellung ist eine gattungsgemäße Entnahmevorrichtung im Rahmen der Erfindung dadurch gekennzeichnet, dass die Barrierewand entnahmeraumseitig eine angeschlossene Auflagefläche aufweist, welche oberhalb einer Grundfläche des Entnahmeraumes angeordnet ist.
  • Durch diese spezielle Gestaltung steht eine relativ große Auflagefläche zur Verfügung, auf der auch großvolumige Lebensmittelprodukte, insbesondere längserstreckte Brot- oder Backwaren wie Baguettes, Stangenbrot, Stangenkuchen etc. einwandfrei für die Entnahme aufgenommen werden. Zugleich sorgt die Anbringung der Auflagefläche oberhalb der Grundfläche des Entnahmeraumes dafür, dass die von dem Kunden aus der Vorratskammer ausgewählten und auf die Auflagefläche überführten Lebensmittelprodukte nicht bis auf die Grundfläche des Entnahmeraumes nach Passieren der Barrierewand hinunterfallen und dabei ggf. beschädigt werden. Vielmehr ist die Auflagefläche meistens nur geringfügig unterhalb eines Barrierehöchsten an die Barrierewand angeschlossen, so dass das ausgewählte Lebensmittelprodukt nur einen äußerst gering bemessenen Fallweg nach Überschreiten der Barrierewand vollführt.
  • Hinzu kommt, dass nach vorteilhafter Ausgestaltung die Auflagefläche eine an die Breite der Barrierewand angepasste Baulänge aufweist. Das heißt, die Auflagefläche erstreckt sich über die gesamte Breite der Barrierewand. Außerdem hat es sich bewährt, wenn die Auflagefläche eine an die Breite der zu entnehmenden längserstreckten Lebensmittelprodukte angepasste Baubreite aufweist. Dadurch wird die Auflagefläche von ihrer Dimensionierung her im Wesentlichen an die Breite des jeweils zu entnehmenden längserstreckten Lebensmittelproduktes, beispielsweise des Baguettes, des Stangenkuchens, Stangenbrotes etc. angepasst.
  • Um das Lebensmittelprodukt einwandfrei auf der Auflagefläche zu halten und abzulegen, hat es sich bewährt, wenn die Auflagefläche gegenüber einer Horizontalen in Richtung auf die Barrierewand geneigt an diese angeschlossen ist. Dadurch werden auf der Auflagefläche aufgenommene Lebensmittelprodukte mit einer Kraft in Richtung auf die Barrierewand beaufschlagt und erfahren einen sicheren Halt.
  • Aus Gründen der einfachen Fertigung und Reinigung hat es sich bewährt, wenn die Auflagefläche und die Barrierewand eine Baueinheit bilden. In diesem Zusammenhang ist es möglich, dass die Auflagefläche gelenkig und verstellbar an die Barrierewand angeschlossen ist. Eine Rückstellfeder sorgt dafür, dass die Auflagefläche bei Belastung mit einer Backware elastisch nachgibt und nach Abgabe der Backware in ihre Ausgangsposition zurückgestellt wird. Die Baueinheit ist größtenteils transparent ausgebildet, um den Blick auf die in der Vorratskammer befindlichen Lebensmittelprodukte freizugeben und die Kaufentscheidung des Kunden positiv zu beeinflussen. Aus Stabilitätsgründen wird man für die Baueinheit regelmäßig eine Konstruktion aus beispielsweise Gitterstäben wählen, die eine dauerhafte Beschichtung, beispielsweise Verchromung, aufweisen. Dadurch ist auch eine leichte Reinigung möglich und wird eine insgesamt hygienisch einwandfreie Auslegung beobachtet.
  • Es hat sich bewährt, wenn die Barrierewand im Querschnitt im Wesentlichen Lambda-förmig ausgebildet ist. Dabei verfügt die Barrierewand üblicherweise über eine Rampe, die in Richtung auf die Vorratskammer bzw. in Richtung der Vorratskammer geneigt ist. Folgerichtig muss ein mit Hilfe der Handhabe ergriffenes Lebensmittelprodukt ausgehend von der Vorratskammer über diese geneigte Rampe bis zum Barrierehöchsten transportiert werden und gelangt dann nach Passieren des Barrierehöchsten auf die daran unmittelbar unterhalb angeordnete Auflagefläche. Unterhalb dieser Auflagefläche ist nun eine L-förmige Auffangschale vorgesehen. Diese Auffangschale verfügt über eine Baubreite, die diejenige der Auflagefläche übersteigt, so dass von der Auflagefläche unbeabsichtigt heruntergefallene Lebensmittelprodukte in dieser L-förmigen Auffangschale gesammelt werden können.
  • Ferner hat es sich bewährt, wenn die Vorratskammer eine wellenartige Auflagefläche aufweist, wie sie bereits Gegenstand der einleitend beschriebenen EP 1 669 009 A1 ist. Eine solche Auflagefläche lässt sich relativ einfach reinigen, weil einerseits keine Kanten vorgesehen sind und andererseits sich Krümel oder Restbestandteile in Tälern der Auflagefläche sammeln.
  • Schlussendlich hat es sich bewährt, wenn die Handhabe einen Stiel mit abgeknicktem Verlauf aufweist. Dieser abgeknickte Verlauf trägt dem besonderen Entnahmevorgang Rechnung, bei welchem die Lebensmittelprodukte zunächst über die Rampe aus der Vorratskammer und dann das Barrierehöchste auf die Auflagefläche befördert werden. Dabei ist der abgewinkelte Verlauf so gestaltet, dass er im Wesentlichen von seiner Ausrichtung und Größe her dem Winkel zwischen dem Barrierehöchsten und der Rampe entspricht.
  • Im Ergebnis wird eine Entnahmevorrichtung für Lebensmittelprodukte und insbesondere Brot- und Backwaren zur Verfügung gestellt, die sich besonders für die Handhabung großvolumiger und vorzugsweise längserstreckter Lebensmittelprodukte wie Stangenbrot, Baguettes, Stangenkuchen etc. eignet. Das gelingt bei zugleich transparenter und hygienisch einwandfreier Gestaltung. Hierin sind die wesentlichen Vorteile zu sehen.
  • Im Folgenden wird die Erfindung anhand einer lediglich ein Ausführungsbeispiel darstellenden Zeichnung näher erläutert;

  • In den Figuren ist eine Entnahmevorrichtung für Lebensmittelprodukte dargestellt. Bei den fraglichen Lebensmittelprodukten handelt es sich im Ausführungsbeispiel und nicht einschränkend um längserstreckte Brot- und/oder Backwaren. Im konkreten Einzelfall geht es um eine Entnahmevorrichtung für Baguettes 1. In ihrem grundsätzlichen Aufbau setzt sich die Entnahmevorrichtung aus einer Vorratskammer 2 und einem Entnahmeraum 3 für die Backwaren bzw. die Baguettes 1 im Beispielfall zusammen. Die Vorratskammer 2 und der Entnahmeraum 3 sind durch eine Barrierewand 4 voneinander getrennt. Mit Hilfe einer Handhabe 5a, 5b können die Lebensmittelprodukte von einem Kunden ausgewählt werden und aus der Vorratskammer 2 in den Entnahmeraum 3 unter Überwindung der Barrierewand 4 verbracht werden.
  • Die Handhabe 5a, 5b ist zweiteilig mit rechteckförmigem Löffel 5a und Stiel 5b ausgebildet. Der Stiel 5b verfügt über einen abgeknickten Verlauf. Die Ausrichtung und die Größe des zugehörigen Knickwinkels sind in etwa an den Winkel α angepasst, welchen ein Barrierehöchstes 6 mit einer Rampe 7 einschließt. Die Handhabe 5a, 5b mag in einem nicht ausdrücklich dargestellten Schlitz oberhalb einer transparenten und schwenkbaren Frontplatte 11 unverlierbar geführt werden. Die Frontplatte 11 schließt frontseitig ein Gehäuse ab, welches die Entnahmevorrichtung im Inneren aufnimmt.
  • Neben der Rampe 7 weist die im Querschnitt Lambda-förmig ausgestaltete Barrierewand 4 noch eine L-förmige Auffangschale 8 auf. Die bereits angesprochene Rampe 7 ist in Richtung auf die Vorratskammer 2 geneigt. Tatsächlich schließt die Rampe 7 mit dem Barrierehöchsten 6 eine Winkel α von ca. 30° bis 60° ein. Die L-förmige Auffangschale 8 findet sich unterhalb einer Auflagefläche 9, die erfindungsgemäß entnahmeraumseitig an die Barrierewand 4 angeschlossen ist. Außerdem wird deutlich, dass die besagte Auflagefläche 9 oberhalb einer Grundfläche bzw. des horizontalen L-Schenkels 8 der L-förmigen Auffangschale 8 respektive des Entnahmeraumes 3 angeordnet ist.
  • Insbesondere anhand der Fig. 2 und 3 erkennt man, dass die Auflagefläche 9 eine an die Breite B der Barrierewand 4 angepasste Baulänge aufweist. Dadurch ist sichergestellt, dass sich die Auflagefläche 9 entlang der gesamten Barrierewand 4 erstreckt. Außerdem ist die Auslegung so getroffen, dass die Auflagefläche 9 eine an die Breite S der zu entnehmenden längserstreckten Lebensmittelprodukte bzw. der Baguettes 1 im Beispielfall angepasste Baubreite aufweist. Auf diese Weise wird gewährleistet, dass das jeweils von der Vorratskammer 2 über die Rampe 7 nach Passieren des Barrierehöchsten 6 schließlich die Auflagefläche 9 erreichende Baguette 1 im Beispielfall sicher auf der Auflagefläche 9 gehalten wird. Hierzu trägt ergänzend der Umstand bei, dass die Auflagefläche 9 gegenüber einer Horizontalen H in Richtung auf die Barrierewand 4 geneigt an diese angeschlossen ist. Der entsprechende Neigungswinkel ist in der Fig. 1 mit β bezeichnet und mag vorliegend im Bereich von bis zu 10° oder noch mehr angesiedelt sein.
  • Die Vorratskammer 2 ist mit einer wellenartigen Auflagefläche 10 ausgerüstet. Dadurch lässt sich die Vorratskammer 2 besonders einfach reinigen, weil Lebensmittelreste, Krümel etc. in den Tälern der wellenartigen Auflagefläche 10 gesammelt werden und hieraus unschwer entfernt werden können. In die gleiche Richtung zielen Erfindungsmaßnahmen, wonach die Auflagefläche 9 und die Barrierewand 4 insgesamt eine Baueinheit 9, 4 bilden. Tatsächlich gehören zu dieser Baueinheit auch die Rampe 7 sowie die L-förmige Auffangschale 8. Die besagte Baueinheit 4, 7, 8, 9 ist größtenteils transparent gestaltet, um einem Bediener den Blick auf die dahinter in der Vorratskammer 2 befindlichen Lebensmittelprodukte zu ermöglichen. Im Rahmen des Beispiels ist die Baueinheit 4, 7, 8, 9 aus Gitterstäben hergestellt. Die Gitterstäbe weisen eine lebensmittelbeständige und leicht zu reinigende Oberflächenbeschichtung, im Beispielfall eine Verchromung auf.
  • Die Auflagefläche 9 ist im Beispielfall gelenkig an die Barrierewand 4 angeschlossen. Zu diesem Zweck ist die Auflagefläche 9 - wie auch die Barrierewand 4 - bzw. die gesamte Baueinheit 4, 7, 8, 9 aus Gitterstäben aufgebaut. Barrierewandseitig ist die Auflagefläche 9 mit ein oder mehreren Gelenken zur Verbindung mit der Barrierewand 4 ausgerüstet. Die Gelenke sind aus den Gitterstäben gebildet. Außerdem ist wenigstens eine Rückstellfeder vorgesehen. Die Rückstellfeder ist zwischen der Rampe 4 und der Auflagefläche 9 zwischengeschaltet.
  • Dabei ist die Auslegung so getroffen, dass die Rückstellfeder nachgibt, sobald sich eine Backware bzw. das Baguette 1 auf der Auflagefläche 9 befindet. Dadurch gelangt das Baguette 1 automatisch in die Auffangschale 8. Nachdem die Backware an die Auffangschale 8 abgegeben worden ist, stellt die Rückstellfeder die Auflagefläche 9 unter Berücksichtigung des Neigungswinkels β zurück. Dazu fährt die Auflagefläche 9 gegen einen oder mehrere Anschläge. Das heißt, die Rückstellfeder beaufschlagt die Auflagefläche 9 in Richtung auf die Rampe 4 elastisch.

Claims (10)

  1. Entnahmevorrichtung für Lebensmittelprodukte, insbesondere Brot- und/oder Backwaren, mit einer Vorratskammer (2) und einem Entnahmeraum (3), die durch eine Barrierewand (4) voneinander getrennt sind, wobei die Lebensmittelprodukte mittels einer von einem Bediener beaufschlagten Handhabe (5a, 5b) aus der Vorratskammer (2) über die Barrierewand (4) in den Entnahmeraum (3) befördert werden, dadurch gekennzeichnet, dass die Barrierewand (4) entnahmeraumseitig eine angeschlossene Auflagefläche (9) aufweist, welche oberhalb einer Grundfläche des Entnahmeraumes (3) angeordnet ist.
  2. Entnahmevorrichtung nach Anspruch 1, dadurch gekennzeichnet, dass die Auflagefläche (9) eine an die Breite (B) der Barrierewand (4) angepasste Baulänge aufweist.
  3. Entnahmevorrichtung nach Anspruch 1 oder 2, dadurch gekennzeichnet, dass die Auflagefläche (9) eine an die Breite (S) der zu entnehmenden längserstreckten Lebensmittelprodukte angepasste Baubreite besitzt.
  4. Entnahmevorrichtung nach einem der Ansprüche 1 bis 3, dadurch gekennzeichnet, dass die Auflagefläche (9) unterhalb eines Barrierehöchsten (6) an die Barrierewand (4) angeschlossen ist.
  5. Entnahmevorrichtung nach einem der Ansprüche 1 bis 4, dadurch gekennzeichnet, dass die Auflagefläche (9) gegenüber einer Horizontalen (H) in Richtung auf die Barrierewand (4) geneigt an diese angeschlossen ist.
  6. Entnahmevorrichtung nach einem der Ansprüche 1 bis 5, dadurch gekennzeichnet, dass die Auflagefläche (9) und die Barrierewand (4) eine Baueinheit (4, 7. 8, 9) bilden.
  7. Entnahmevorrichtung nach Anspruch 6, dadurch gekennzeichnet, dass die Baueinheit (4, 6, 7, 9) größtenteils transparent ausgebildet ist, beispielsweise aus Gitterstäben besteht.
  8. Entnahmevorrichtung nach einem der Ansprüche 1 bis 7, dadurch gekennzeichnet, dass die Barrierewand (4) im Querschnitt Lambda-förmig mit in Richtung der Vorratskammer (2) geneigter Rampe (7) und unterhalb der Auflagefläche (9) L-förmiger Auffangschale (8) ausgebildet ist.
  9. Entnahmevorrichtung nach einem der Ansprüche 1 bis 8, dadurch gekennzeichnet, dass die Vorratskammer (2) eine wellenartige Auflagefläche (10) aufweist.
  10. Entnahmevorrichtung nach einem der Ansprüche 1 bis 9, dadurch gekennzeichnet, dass die Handhabe (5a, 5b) einen Stiel (5b) mit abgeknicktem Verlauf aufweist.
